Like slaws, this salad is nifty served with sandwiches and veggie burgers. It’s a great choice for taking on picnics as well.

One 16-ounce package frozen corn kernels, thawed
1 small red bell pepper, finely diced
2 large celery stalks, finely diced
2 scallions, green parts only, thinly sliced
1/2 cup natural low-fat vinaigrette, or to taste
Salt and freshly ground pepper to taste
