When you don't feel like struggling to shuck oysters, just throw them on the grill.

Ingredients

3 tablespoons unsalted butter, softened
1 small shallot, minced
2 teaspoons chopped fresh sage
1 tablespoon minced fresh chives
1 teaspoon dry Sherry or brandy
1 teaspoon sharp hot sauce such as Tabasco
Salt
Freshly ground black pepper
6 medium oysters

Preparation

  1. Step 1

    In a small bowl, blend together butter, shallot, sage, chives, Sherry, hot sauce, salt, and pepper.

    Step 2

    Light a grill. Put oysters, flat side up, over a hot fire and grill until oysters pop open, 2-3 minutes. As they open, carefully transfer to a plate, keeping juices in shell. Take off top shell, add a dab of butter mixture, and serve right away.
