17 Recipes That Feel Like Vacation (Even if You’re Not Going Anywhere)

Even if you’re spending the weekend at home, eating as if you’re on vacation can help lift the mood. So it’s time to pile platters with inspired-by-the-farmstand salads and steam some clams with sweet corn. Beach sandwiches so good you don’t even need the beach? Put those in the plans. For brunch, flip some tangy farmer’s cheese pancakes, then top them with whatever berries you can find. Make yourself a fancy shaken iced coffee, too, then put your feet up and don’t even consider thinking about the week ahead.

Skillet Cod, Clams, and Corn With Parsley
Steamed clams and fresh sweet corn give that summery vibe to cod fillets in this recipe, which one of our readers calls “seaside in a skillet in the best way possible.” Or you can skip the cod and go with this beloved brothy dish. Either way, have some fresh bread on hand for dipping.

Hot Water Peach Cobbler
This peach cobbler has a fantastically crackly crust, thanks to an unusual method: You smear the batter over the fruit, sprinkle with sugar, then add hot water on top. The result is fluffy and cakey, with a crisp exterior that's a bit like the torched lid of a crème brûlée.

Soft-Shelled Crabs Meunière
You don't have to leave cooking soft shells to the seafood-shack pros. The key is just not to mess with them too much. These are lightly dredged and cooked until crisp in clarified butter, then topped with a quick, bright, lemony sauce.

If you're going to eat your BLT outside anyway, you might as well grill that bacon. Be sure to select a thick-cut version for more even cooking.
