Gingered Bulgur Salad with Grapes

Ingredients

1/2 cup bulgur
3/4 teaspoon salt
2/3 cup boiling water
1/2 cup seedless green grapes
1/3 cup (packed) fresh cilantro leaves
1 garlic clove
1 teaspoon grated peeled fresh ginger
2 tablespoons fresh lemon juice
2 tablespoons olive oil

Preparation

  1. Step 1

    In a bowl, stir together the bulgur and salt. Stir in the hot water and let stand, covered, 30 minutes.

    Step 2

    Slice the grapes and chop the cilantro. Mince the garlic. In a small bowl, combine the grapes, cilantro, garlic, ginger, lemon juice, and oil. Fluff the bulgur with a fork and stir in the grape mixture.
