How to Make Pie Dough Using a Food Processor

I'm Kelly Senyai with epicurious.com
and this is how to make pie dough
in a food processor.
Combine the flour and the salt in the bowl
of the food processor.
Pulse together just to make sure
that they're really well-blended.
Next we're gonna add the fat to the bowl
of the food processor.
I'm using a mix of unsalted butter and shortening
and it's the shortening that's gonna give the pie crust
that really flaky texture.
It's important that your fat is cold.
Now we're gonna pulse together
until it forms pea-sized pieces.
Next we're gonna add ice cold water to the bowl
and I'm gonna start by adding about three tablespoons.
Pulse until the dough starts to come together.
The key here is don't over-mix the dough.
You just want it to come together in clumps.
If it comes together in one big ball,
that means you've gone too far.
To test to see if you need to add any more ice water,
pinch the dough together between your thumb
and your forefinger.
It should stick together just like this.
If it's not sticking together,
add one more tablespoon of water
and pulse for just a couple more seconds.
Turn the dough out onto a lightly floured surface
and then use the heel of your hand
to bring the dough together.
This is gonna be a really shaggy dough
so don't worry if it doesn't look
like it's coming together entirely.
Next we're gonna transfer the dough to plastic wrap.
If you have a couple of leftover pieces,
just press them into the top.
It's still gonna be really shaggy at this point.
Then secure the plastic wrap tightly around the dough.
And if you want to prevent any fridge odors
from getting in, just add a second layer of plastic wrap.
And now the dough's ready to go in the fridge
for at least 30 minutes.
And that's how you make pie dough in a food processor.
