How to Make a Top Crust for Pie

I'm Kelly Senyei with epicurious.com,
and this is how to make a top crust for a pie.
The first thing I'm gonna do is add my apple pie filling
or whatever filling you're using to the bottom crust.
I've rolled out a second piece of dough
that's gonna be the top crust.
At this point you can simply cut slits
in the top of the knife,
or if you wanna add a more personal touch
you can stamp out shapes.
Making slits or using a cookie cutter
to cut out shapes on the top
is gonna allow the pie filling to vent
so all that steam can escape.
You then wanna transfer the top crust to your pie.
It's actually easiest if you roll the dough
up onto your rolling pin
so that you can unroll it onto the pie.
Next, you're gonna trim off any of the excess dough
around the pie plate.
Kitchen sheers work or you could also use a paring knife.
Next' I'm gonna crimp together the edges
so that the top crust and the bottom crust
are secured together.
You can do this by tucking the top crust
underneath the bottom crust.
And finally, you're gonna brush the top of the pie
with an egg wash,
and an egg wash is just one egg beat
with a little bit of water.
It's that egg wash that's gonna give it
that gorgeous golden brown glaze.
And then your pie is ready to go in the oven,
and that's how you make a simple top crust for a pie.
