How to Make a Lattice-Top Pie Crust

I'm Kelly Senyai with epicurious.com
and this is how to make a lattice-top pie crust.
You want to start by adding your pie filling
to your bottom crust.
And then I rolled out a second piece of dough
and this is gonna form the lattice on the top
of our pie crust.
I'm using a paring knife to cut out long thin strips
but you could also use a pizza cutter.
Lay the strips across the pie,
spacing them about three quarters of an inch apart.
Take the remaining strips of dough and weave them
over and under and over and under
to create a lattice-top.
Push the lattice strips down to attach them
to the bottom crust.
And then using your kitchen shears,
cut off any excess dough around the pie.
Next, take the lattice parts and crimp them
with the bottom crust so that there's no overhang.
And finally, use a pastry brush dipped in a little bit
of egg wash to brush on top of the pie.
An egg wash is just one egg beaten
with a little bit of water
and it's what's gonna give your pie
that golden brown color.
And then it's ready to go in the oven.
And that's how you make a lattice-top pie crust.
