Indian Cauliflower Pasta

Ingredients

Equal amounts of cooked cauliflower chunks and cooked pasta (a chunky shape, like fusilli, radiatore, or medium shells, is best)
Smooth or chunky peanut butter, thinned with vegetable or chicken broth to a gravy consistency
1/8 teaspoon cayenne pepper
1 teaspoon garam masala (an Indian spice blend you can buy ready-made or make yourself)

Preparation

  1. Combine all the ingredients in a baking dish and warm in a 350°F oven for 30 minutes. This works equally well with broccoli.
