Goat Cheese and Red Pepper Wraps

Soft goat cheese is a splendid spread for wraps, with a special affinity for red peppers.

Ingredients

2 lavash wraps, 10-inch round wraps, or burrito-size (10-inch) flour tortillas
2 ounces spreadable goat cheese, or to taste
2 to 3 pieces jarred roasted red pepper, drained and thinly sliced
2 tablespoons minced fresh cilantro, optional

Preparation

  1. Step 1

    Place each wrap on a serving plate. Spread thinly with goat cheese, leaving about a 1/2-inch edge all around.

    Step 2

    Scatter the red pepper strips over the goat cheese, and sprinkle with the cilantro if desired. Repeat with the remaining wrap.

    Step 3

    Roll up and microwave just until warmed, about 40 seconds. Cut in half crosswise and eat out of hand.
