How to Roll Out Cookie Dough

[Instructor] Rolling out cookie dough.
Start rolling out cookie dough
by working on a lightly floured piece of parchment paper.
Unwrap the dough, which should be straight from the fridge,
nice and well-chilled.
Lightly flour the rolling pin, and begin rolling
by pressing down firmly and evenly.
Turn the paper, and continue rolling,
sprinkling your dough and your rolling pin with flour
if you need to,
to keep the tools from sticking to one another.
Don't let the cookie dough sit out for very long.
If it starts seeming too soft,
put it back in the fridge to firm up a little bit.
Ultimately, the dough should be
uniform thickness of about a quarter of an inch.
Once the dough is completely rolled out,
place it on a cookie sheet
and put it in the refrigerator to chill
for about an hour before cutting.
