[Female Narrator] Creaming butter and sugar.
We're going to show you how to cream together
butter and sugar.
This is the first step in making many types
of cakes and cookies.
Start with room temperature butter--
cold butter will be too hard to beat.
Put it in a mixing bowl and use a handheld electric mixer.
You can also use a standing mixer
fitted with the paddle attachment.
Beat the butter, starting with low speed.
Gradually, we'll increase the speed to medium.
We're going to beat it until it's creamy and fluffy.
This helps beat in air bubbles,
which will make the finished cake nice and light.
Now, let's add the sugar gradually while continuing to mix.
Continue beating the mixture and adding the sugar slowly.
Beat for about two or three minutes,
taking the time to scrape down the sides with the spatula.
You should also increase the speed
of your mixer at this point.
Beat the mixture until it becomes lighter in color
and the texture goes from grainy to smooth and creamy.
The sugar has now been fully incorporated into the butter.
Getting this mixture nice and fluffy
will help your finished dessert have the right texture.
