Everything But the Bagel Cottage Cheese and Lox Bowl

I love cottage cheese: It’s loaded with protein and makes the perfect base for this savory bowl that’s inspired by all the toppings I love on a bagel (minus the bread). Perfect for breakfast or a snack, these bowls are an easy way to get more nutrient-rich foods into your day. If you’re not a fan of cottage cheese, you can use plain yogurt instead.

Ingredients

3⁄4 cup cottage cheese (I like Good Culture Low-Fat Classic)
1 oz. Nova lox, chopped
1⁄2 cup sliced Persian (mini) cucumbers
1⁄2 medium orange or yellow bell pepper, chopped
10 grape tomatoes, halved
1 thin slice red onion, chopped
1 tsp. salt-free everything bagel seasoning

Preparation

  1. Place the cottage cheese in a small bowl. Layer the lox, cucumbers, bell pepper, and tomatoes on top of the cottage cheese. Garnish with the red onion, drizzle with 1 teaspoon extra-virgin olive oil, and sprinkle with the everything bagel seasoning.
