41 Layer Cake Recipes for Every Celebration

Layer cake recipes give something snacking cakes, cupcakes, sheet cakes, and loaf cakes could never: They give height. And that stature makes a layer cake feel grand. The multiple layers say, “I went the extra mile—mile high, that is—for you.” Whether it’s butter cake with chocolate buttercream, chocolate cake enrobed in ganache, or ice cream cake topped with mousse-like whipped cream, if it’s stacked, it’s special.
But this also means you might want to do the work in batches. We’ve got some tips for how best to store layers of cake, in case the icing and assembly must be tended to another day. (Some keep well at room temperature, but there are definitely exceptions.)

Easy Vegan Chocolate Cake
No eggs, no butter, no milk; no creaming or beating or whipping. Whisk together eight (well, nine if you count water) ingredients (likely ones you have in your pantry right now), and you’ll have something akin to dark chocolate sponge cake. A really good one.

Tres Leches Cake
Though often served as a sheet cake, this version of the signature Latin American dessert is stacked with a layer of fresh fruit between two layers of sponge cake, sodden with a mixture of heavy cream, evaporated milk, sweetened condensed milk, and vanilla extract.

Carrot Cake With Cream Cheese Frosting
This minimalist-inspired carrot cake is all about fresh grated carrots and warm spices; there are no nuts and dried fruit getting in the way. That said, if you can’t help but mix those in, that’s okay. Be free! The recipe will still work and the cake will still be delicious!

Smith Island Cake
Named after a group of three island communities on the Chesapeake Bay collectively called Smith Island, this layer cake is said to have been baked since the 1800s as a treat to eat during the annual oyster harvest.

Black Forest Cake
This classic Black Forest cake uses a cherry liqueur native to the German region of the same name—twice. First in the syrup used to soak the chocolate cake layers, then to preserve the sour cherries that get sandwiched between.
