The spritz has come a long way from the original white-wine-and-seltzer spritzer, and spritz recipes today go far beyond the popular Aperol cocktail. Still, no matter what you put in them, fizzy spritzes are refreshing; they're the ideal low(ish)-ABV cocktail to sip with salty snacks before a meal. And while the template (something fruity, bitter, or rich lightened with something fizzy) doesn’t vary all that much, these spritz recipes offer a wide range of flavors. Find your new favorite bubbly delight below.

Our Favorite Aperol Spritz
Yes, we're starting this list with the most obvious of all the spritz recipes. But we promise, this is a special version. Around the Epicurious offices, we call this an XR spritz—that XR stands for eXtra Refreshing. The key? We shifted the ratio a bit, dialing down the orangey liqueur a little for a frothier, less-sweet drink.
