Smoked Feta Dip

You’re gonna wanna whip it good for sure with this super simple smoked feta dip. And what’s better than grilled and garlicky feta cheese that’s lapped up with flatbread or some fresh snappy veggies? Nothing. And if you want to add a little heat to this dish for a twist, start by throwing in some chopped hot peppers or even your favorite hot sauce.

Ingredients

1 (8-oz.) block feta cheese
4 Tbsp. olive oil, divided
Kosher salt, for seasoning
1⁄2 cup whole milk Greek yogurt
1⁄2 cup mayonnaise
2 cloves garlic, grated
1 large lemon, washed and dried
Pita bread
Sliced vegetables, for dipping

Preparation

  1. Step 1

    Heat a grill for medium-high indirect cooking. Brush the block of feta with 2 tablespoons of the olive oil and season well with kosher salt. Put the block of feta directly on the grill grates over direct heat and cook until lightly browned, about 2 minutes. Remove the feta—a fish spatula is best for this.

    Step 2

    Crumble the grilled feta, reserving a few tablespoons for garnishing, and add to a food processor along with the yogurt, mayonnaise, garlic, zest and juice of the lemon, and a heavy pinch of kosher salt. Blend until smooth and doubled in volume, about 5 minutes total.

    Step 3

    Move the feta dip to a serving bowl and drizzle with the remaining 2 tablespoons of olive oil and the reserved feta. Serve with pita bread and vegetables for dipping.
