A big pot of soup is the ideal way to start a week—maybe it simmers on Sunday and makes Monday night easy, or maybe you'll pack leftovers for lunch for a few days. But which soups and stews work for folks who are keeping an eye on blood sugar? Vandana Sheth, RDN, CDCES, FAND, used nutrition analysis software to calculate the macronutrients (especially carbohydrates) in each of these recipes and selected the type 2 diabetes–friendly options below.
