Here’s What Olivia Quintana Is Cooking This Month

For me, January is a month for recovery. Some people may be diving into New Year’s resolutions, but I’ll be taking this time to recuperate from the stress of winter travel and the busy holiday social calendar. Everything I’m cooking this month must be easy, tasty, and comforting. I want simple meals, drinks I can curl up with on the couch, and plenty of cake. And the only people I will be seeing are those who are excited about easy potluck-style dinners and brunches in our pajamas. Here are the low-lift recipes I’ll be prepping.

Honey-Mustard Pork Tenderloin
This just might be one of my favorite recipes on the site. It’s truly easy to make, especially when I prep the marinade in the afternoon. I like to serve it with a big green salad and some rice (because I can’t live without rice) for a flavorful, nourishing meal.

One-Bowl Ricotta Olive Oil Pound Cake
Just because the holidays are over does not mean I have stopped baking. But you will absolutely not see me pull out my stand mixer this month. This one-bowl cake is incredibly moist and a touch rich without being too heavy. I like it with whipped cream, a chocolate drizzle, or just on its own with a cup of tea.

Creamy Vegan Red Pepper Pasta With Garlic Bread Breadcrumbs
I'm not going plant-based for the new year (though we do have a vegan comfort food meal plan for you if you are). Still, this easy pantry pasta is always a great dinner choice. I love how creamy this pasta can get without any added dairy.

Quick Chana Masala
This cozy dish pairs perfectly with some rice and an easy raita on the side. I love any recipe that starts with canned chickpeas instead of dried, and this one gets bonus points for not even having to drain the can!
