How to Make Vinaigrette
Released on 11/11/2008
[Narrator] Making vinaigrette.
A classic vinaigrette is one part acid,
which could be either vinegar or citrus juice,
and three parts oil.
Here, we'll start by adding a
spoonful of mustard to the bowl.
The mustard is not an essential part of the recipe,
but it will add flavor and help to emulsify the mixture.
To change the flavor, you could also
vary the proportions of oil to vinegar, if you wanted.
Next, pour in the vinegar
and whisk it together with the mustard.
Now, we're going to add our oil.
Whisking constantly, slowly add it in a steady stream.
Keep whisking until all of the oil has been added
and the mixture is fully emulsified.
Emulsification is when one liquid is dispersed
and suspended in tiny droplets throughout another.
If the vinaigrette separates,
just whisk it well to re-emulsify it.
Finally, whisk in some salt and pepper.
A classic vinaigrette is a great dressing
to have on hand for salads.
Or as a dipping sauce for veggies.
We'll use it to dress our tomato and cucumber salad.
Toss the salad well to get it completely coated.
Then, enjoy.
