Reinvent Your Leftover Chicken

The way we see it at Epicurious,
leftover chicken has two enemies.
Number one, soggy skin.
It's gross and it's never as crispy
as it was the night before.
Number two, it's just kinda boring.
You've gotta jazz it up or else you're serving
the same thing you did last night for dinner.
The secret to crispy skin is to remove it
from your leftover chicken.
Heat up a pan add a little oil and add your skin.
Do you hear that?
That's your skin coming back to life.
So you're just going to crisp your skin up here
until it's nice and golden brown.
That's gonna give you awesome crispy chicken bits
to garnish whatever dish you decide
to turn your leftovers in to.
I'm just gonna let these cool for a few minutes
and then slice them in to our crispy bits.
So next we're gonna shred the chicken
into bite sized pieces.
This is gonna help us transform this chicken
in to something new.
We could sprinkle it over salads, stir it into soups,
or why not cover it in cheese
and turn it in to quesadillas like we're going to.
I'm going to start with a little oil.
Gotta hot pan here.
And I'm gonna put a tortilla in.
Start with some cheese for a nice melty base layer.
I've got some sauced bell peppers, some scallions,
got our shredded chicken,
and the best part, our crispy chicken skin.
Little salt and pepper.
So this isn't too fancy but it's gonna be
100 times better than just putting out
the same old leftovers you served last night.
So we crisped up the skin, we shredded the chicken,
we made this amazing quesadilla
and now, the best part, we get to eat it.
