How to Test a Turkey for Doneness

I'm Kelly Senyei with epicurious.com
and this is how to test for doneness on a turkey.
We're using an instant read thermometer and the key
when testing for doneness is you wanna insert it into
the thickest part of the turkey without touching the bone.
So, I'm gonna insert it into the thigh.
The USDA recommends that your turkey
be 165 degrees fahrenheit.
Some people will bring their turkeys out of the oven
a little bit before 165 and let them rest
on the counter until they come to temperature,
and you can really do it either way.
But you wanna make sure that you test both thighs,
as well as both breasts, and both wings
to make sure that they're at temperature.
Also, if you've stuffed your turkey
the stuffing needs to come to 165 degrees.
And don't forget to let your turkey rest for 30 minutes
before you carve it so that all of the juices stay intact.
