How to Melt Chocolate

[Instructor] Melting chocolate.
Many dessert recipes call for melted chocolate,
and it is such a simple thing to do once you learn how.
The first thing we'll do is create
a makeshift double boiler, which is a pot
with hot simmering water, and a heat-proof bowl
sitting over the pot that does not touch the hot water.
Our chocolate chips or coarsely chopped chocolate
are in the bowl and will start melting.
By the way, if your recipe calls for melting chocolate
with another ingredient, add it now
at the beginning of the melting.
You'll want to melt the chocolate at low temperatures,
so never let your chocolate temperature
get above 115 degrees Fahrenheit.
If the chocolate becomes too hot
it will become grainy and scorched.
Using a wooden spoon, we'll just gently stir our chocolate
to make sure it melts evenly, very important.
Don't let any water get into the chocolate,
because it will make it grainy.
If this does happen, a little vegetable oil
can help smooth out the chocolate,
but this will definitely affect the taste.
We'll just continue to stir until the chocolate
is completely melted and smooth.
This looks perfect, if the melted chocolate is to be
part of a recipe, just store it at room temperature
until you are ready to use it.
For us, we'll serve ours over some ice cream.
