Ginger-Scallion Relish

This ginger-scallion relish, along with hoisin BBQ sauce and cucumber spears dipped in gochugaru, helps make up the Ssam Dog.

Ingredients
1 2-inch piece peeled ginger
8 scallions, thinly sliced
2 garlic cloves, finely grated
1 tablespoon toasted sesame oil
1 teaspoon finely grated lime zest
2 teaspoons fresh lime juice
Kosher salt
Preparation
Slice ginger into thin strips. Toss with scallions, garlic, sesame oil, and lime zest and juice in a small bowl; season with salt.
