Ingredients

3 cups water, divided
1/2 cup coarsely chopped peeled fresh ginger
1/3 cup fresh lime juice
1 tablespoon finely grated lime peel
3/4 cup golden brown sugar

Preparation

  1. Thoroughly blend 1 cup water and ginger in blender. Bring remaining 2 cups water to boil. Add ginger-water mixture, lime juice, and lime peel. Remove from heat; cover and let steep 1 hour. Add sugar; stir to dissolve. Strain syrup into bowl. Chill until cold.
