11 Ways to Make It Through Yet Another Winter Squash

When March rolls around—looking at you, Monday—there’s a bit of bad news. Though we’ve never been more ready for fresh, green things, produce can be a little scarce at this time of year. (How many days left until it’s spring for real? Can we move that up at all?) Still, you can always count on winter squash to be there whenever you need it. And I’m guessing you might even have a butternut or kabocha sitting around, just waiting for you to find cooking inspiration. Here are 11 great recipes that will get you excited about cooking whatever squash you’ve got this weekend.

Butternut Squash and Chorizo Hash
You only need half of a butternut for this quick sauté with smoky, spiced chorizo. Lime juice adds a bright finish—spoon the mixture into tortillas, over rice, or on a plate topped with a runny fried egg.

Want to get a little fancy—but not too fancy? This recipe has killer presentation, but is quite easy to pull off. A chile-maple glaze makes it shine. Pro tip: set two wooden spoons on either side of the squash when slicing so that you don't cut all the way through.
