Some people find cooking fish
intimidating, but it doesn't have to be.
Make things easier on yourself
and start with the best product you can find.
You want a nice, vibrant color.
This is exactly what you're looking for.
Start by seasoning it, little salt and pepper.
You wanna get your pan really hot.
We recommend using cast iron or stainless steel,
and you wanna pour in some neutral
vegetable oil, like grapeseed.
Start your fish skin-side down.
(pan sizzling)
So give the fish a little press so you make sure
the skin is making contact with the pan,
and then just leave it.
While your skin is crisping up,
you can just add the seasoning to the other side here.
So, when your fish is ready to flip,
it's gonna let you know because the skin
will release from the skillet.
So you just slide your spatula under.
If you want your fish to be medium-rare,
you can flip it and cook it for
another 30 seconds to a minute.
Watch the sides of the fillets here to see
how pink the flesh is getting.
Fish is the fast, easy, weeknight
dinner that you should be cooking at home.
