If you still aren’t wise to the many capabilities of the Instant Pot, here is a quick primer: The Instant Pot is several kitchen appliances rolled into one. It is, first and foremost, an electric pressure cooker, but it functions as many other things by way of each model’s range of presets. It can be a slow cooker, a rice cooker, and can even be a yogurt maker. There are also a number of instant pot accessories available, like the air fryer lid, which extend the mighty gadget’s capabilities even further.
Deciding to save a ton of money on an Instant Pot is the easy part; it’s choosing which (steeply discounted!) model is right for you that is the real challenge. Distinguishing among the Pro, Duo Plus, Ultra, and Max might sound like the setup to a joke, but each machine really does have its own specific set of features. Instant Pot Duo
The Instant Pot Duo is the classic model, without too many bells and whistles, just the classic settings and the stainless steel inner pot. It is the best Instant Pot model for someone who is not as adventurous or daring when it comes to cooking. Pretty much every Instant Pot specific recipe online was designed and tested on this baby, so it's a safe choice, and also the most affordable.

Instant Pot Duo Plus
The Duo Plus adds a few more functionalities to the list, including a combo cake/egg maker and a sterilizer. The 6- and 8-quart models feature 15 “one-touch” smart programs, so you can tackle a ton of different techniques, like sous vide, with just the push of a button. As far as Cyber Monday Instant Pot deals go, this one is tough to beat.
Instant Pot Duo Crisp + Air Fryer
The Duo Crisp + Air Fryer comes with two lids: one that works with all the normal pressure-cooking modes and another than turns your model into a countertop air fryer, complete with roasting, baking, broiling, and dehydrating capabilities. The clearly labeled button pad makes it easy for anyone to use, and the delayed start function means you’ll always have dinner warm and ready exactly when you want it.
Instant Pot Pro
This sleek all-black Instant Pot looks kind of like a Star Wars–themed pressure cooker—we’ll leave it up to you whether that’s a selling point. (Also an actual Star Wars–themed Instant Pot does exist, FYI). It does all the usual Instant Pot stuff: pressure cook, slow cook, sous vide, sauté, sterilize, make yogurt, keep food warm, bake cake, and steam. But as a premium higher-price-point model, it has 28 preprogrammed settings for cooking and the option to save five programmed recipes of your own so you can have an arsenal of weeknight meals ready at the tap of a button. The air-fryer lid is also compatible with this model (as the Instant Pot Pro Crisp), meaning if you purchase that separately, you can use this as an air fryer (it also works on all other Instant Pot models except the Smart WiFi, Duo Evo Plus, Duo SV 60, or Max 60).
Instant Pot Ultra
Think of the Instant Pot Ultra is the Duo Plus but with complete analog control over the settings. This is the model for people who are already well-versed in using a pressure cooker, and who want to make precise adjustments to time and temperature instead of working from a menu of established pre-sets with a narrower range of wiggle room. This model might be a little daunting for a beginner, so save it for the experts.
Instant Pot Vortex
This is a 4-in-1 countertop air-fryer oven that’s easy to clean and yields crispy, crunchy results. You lose the pressure-cooking capabilities of the Duo Crisp, but you get more room for air-frying, baking, roasting, and reheating.

Instant Pot Vortex Plus
All of the features of the Vortex, with the added bonus of rotisserie, broiling, and dehydrating options. Included in your purchase is a cooking tray, drip pan, rotisserie spit and forks, rotisserie basket, and rotisserie fetch. The 10-quart capacity makes it great for cooking crispy wings or fries for a crowd; the 6-quart is great for dinners for one or two without having to turn on the oven.
Instant Pot Max
The Instant Pot Max uses 70% less energy to achieve all the same cooking features as the Duo Nova, plus pressure canning; this model has 15 psi pressure-cooking capability, which previously had only been achieved by stovetop pressure cookers. Also, the sous vide function is more dialed in on the Max than other models—it can control temperature within 1°C or 1.8°F.
Instant Omni Pro
The Instant Pot Omni Pro is not a pressure cooker. Rather, it is Instant's answer to all those new smart ovens on the market. It's an air fryer, toaster oven, dehydrator, and rotisserie. It's on another level, and snagging it for $150 off is a pretty solid deal.
