Tahini

Blueberry and Mango Salad with Tahini Ginger Dressing

Pretty enough for company, this fresh fruit salad comes together in a snap.

Baked Falafel With Orange-Tahini Sauce

This healthier falafel dinner brings the Middle Eastern platter home with a tangy tahini sauce and an easy cabbage and tomato salad.

Sesame-and-Soy Watermelon Poké

Marinating and searing the watermelon concentrates its flavor and primes it for this savory treatment.

Basic Tehina Sauce

Use this rich and creamy tehina (also called tahini) sauce to make hummus, or drizzle over meats or vegetables.

Hummus Tehina

We love chef Michael Solomonov's hummus all by itself, but it's also an incredible foundation for any seasonal toppings, from harissa-spiced shaved carrots to spiced black-eyed peas to fresh spring peas and pickled onions.

Falafel Mushroom Loaf

This hearty meatless loaf combines earthy wild mushrooms with classic falafel spices.

Spiced Green Tahini Sauce

If you don't have both spices, it's okay to omit one or the other.

Israeli-Style Hummus

Make this super luscious hummus and you'll never go back to store-bought.

Creamy Tahini Sauce, Three Ways

Serve this ultra-creamy tahini sauce with grilled meats or roasted vegetables, or use it as a base for a silky avocado dip or an herby salad dressing.

Cauliflower “Shawarma”

This obviously isn't really a shawarma—there is no lamb and no fat—but it is a way of slow-cooking cauliflower that makes it feel substantial and tasty enough to warrant the association.

The Seven Species

Chocolate-Tahini Truffles

Mackerel with Cauliflower "Couscous" and Tahini

Use one 2-pound mackerel if you can't find smaller ones, or substitute arctic char or trout.

Tahini Cookies

Honey-Roasted Carrots With Tahini Yogurt

The inspiration for this was Sarah's grandmother ("nan") Dulcie in Tasmania, who always used to add some honey to the pan before roasting her carrots. I'm not sure what Dulcie would have thought about a tahini yogurt sauce served alongside, but the sweetness of the carrots certainly welcomes it. Make this extra vibrant by using different-colored carrots.

Salted Sesame Caramel

Cream of tartar is optional, but it keeps the sugar from crystallizing, making this caramel foolproof.

Halvah Mille-Feuilles

Though this recipe calls for a raspberry garnish, feel free to swap in caramelized apples or toasted pistachios. When working with phyllo dough, make sure to keep the unused phyllo sheets covered as much as possible, as they tend to dry out quickly.
