Haroseth (Dried Fruit and Nut Paste)

Haroseth, a symbolic seder food, alludes to the mortar that the Jews used to build the pyramids when enslaved by the Egyptian pharaoh. Though haroseth visually mimes the unappealing look of cement, its taste is actually a delicious combination of fresh or dried fruit, nuts, spices and wine. There are as many variations of haroseth as there are seder tables around the world, and all reflect a myriad of traditions. This recipe is inspired by my grandmother's simple grated apple, walnut, and cinnamon version, along with the flavors of my husband's Middle Eastern background.

King's Cake

The King's Cake (galette des rois), in whatever form it took, with a "bean" baked into it, has been the king of desserts on Twelfth Night, also known as the Feast of Kings or Epiphany in France, since the Middle Ages. In those days, the French King's Cake took different forms depending on the region. It was a brioche topped with candied fruits in Provence, a flat galette with cream in the North, a dry cake in Lorraine, a puff pastry round with an almond flavored filling in Lyon. À Paris, it was a gorenflot, a sort of enriched bread raised with baker's yeast, something like a Polish brioche. The ritual of this shared cake is symbolic of the day of the Epiphany, commemorating the presentation of Jesus to the Magi on the sixth of January, but it is also redolent of other pagan traditions linked to the cult of fertility that was so popular with the Romans. The "bean" hidden inside the cake was originally an actual lima bean, a symbol of renewal and fecundity, before it was replaced by a tiny porcelain figure representing the Christ child, then by a host of trinkets. Today, the marzipan-filled, puff pastry round has gained supremacy almost everywhere. And for good reason—few pastries can give such extended pleasure. How delicious when, under its fine butter coating, the many-layered pastry (milles-feuilles), still warm, encounters the silky, fondant marzipan on the palate—a perfect combination of the puff pastry and grainy, ground almonds. No one knows exactly when this so-called "Parisian" cake was born. The invention of marzipan dates from the sixteenth century. The history should be treated with caution, but it is sufficiently delicious to have been inscribed indelibly in the memory of gourmets. In 1588, an Italian marquis named Murio Frangipani marketed gloves perfumed with almonds. There is nothing surprising about this because perfumers were originally glove makers. The essence of Italian frangipani, about which Catherine de' Medici was passionate, inspired the pastry cooks of the French court to create frangipane cream, an equal mixture of pastry cream and almond cream. King's Cake, whether flavored with fruits or almond cream, is a dessert with a history. Certain Epiphanies have been retained in the annals. For instance, on January 6, 1650, at the Louvre Palace, Anne of Austria and her son Louis XIV indulged in the cake, leaving on the table, as was the custom, a share for the poor, in this case the very part that contained the bean. The next morning, there was "no other king than that of the bean," the king having fled Paris to escape the uprising known as the Fronde. Is it because of this unpleasant memory that the tradition of naming the person who finds the bean as "king" for the day was outlawed during Louis XIV's reign, the custom being officially judged to be too pagan? In 1770, Diderot recounted this anecdote in his Encyclopédie, summarizing it with this amusing aphorism: "Signe Denis, sans terre ni château. Roi par the grâce du gâteau." (The sign of Denis [patron saint of Paris] without land or château, King by the grace of a gâteau.) The joy of eating the crown is all part of the pleasure of enjoying King's Cake once a year, and more....

To Make an Excellent Cherry Bounce

Among the few recipes known to have been used by the Washington family is this one for cherry bounce, a brandy-based drink popular in the eighteenth century. It seems to have been such a favorite of General Washington's that he packed a "Canteen" of it, along with Madeira and port, for a trip west across the Allegheny Mountains in September 1784. This fruity, spiced cordial requires a bit of work and time, but the result is well worth the effort. After pitting, halving, and mashing the cherries, be prepared to set away the sweetened brandied juice for twenty-four hours and then again for about two weeks after infusing it with spices. Enjoy small glasses of cherry bounce at room temperature, and keep the remainder on hand in the refrigerator.

Peach Prosecco

Sean Traynor, bartender at The Windsor in Phoenix, Arizona, created this crisp, beautifully hued cocktail for our story Spring Cocktails Perfect for Brunch. Sparkling wine is often used to top off a drink, but in this case Traynor mixes it with the rest of the ingredients in the cocktail shaker. The reason? He's using it more for its acidity and flavor than effervescence. For pure peach flavor, Traynor insists on a true peach-based liqueur, so put away the peach Schnapps; he recommends Sathenay Crème de Pêche de Vigne Liqueur, Rothman & Winter Orchard Peach Liqueur, or Massenez Crème de Pêche.

Quinoa Crunch with Seasonal Fruit and Yogurt

High-protein quinoa makes a delicious topping that keeps well. Here, the toasted grain gives crunch to yogurt and fruit. You could also add a few tablespoons to your favorite cereal for added texture.

Poached Tropical Fruit with Sorbet

Chunks of kiwi, mango, and pineapple are poached in a spicy peppercorn-infused pineapple syrup, then served with sorbet. Kiwifruit and mango offer ample vitamin C; pineapple provides bromelain, an enzyme that aids digestion, reduces inflammation, and helps heal bruises.

Oven-Dried Fruit with Chocolate and Toasted Almonds

Oven-drying is a slow, gentle cooking process that uses dry heat to extract the water from fruit. Left in the oven for several hours at a low temperature, the fruit does not burn but shrinks and shrivels bit by bit as the water evaporates. As the outside of the fruit dries, the inside turns soft and chewy. Although pears, plums, and apricots are used here, any combination of stone fruit, berries, or other fruit can be dried in a similar way.

Chicken and Mango Salad

This salad features Madras curry powder—a blend of spices that includes turmeric, coriander, cumin, and cinnamon, all of which are antioxidants, anti-inflammatories, and detoxifiers. Watercress is also a potent detoxifier.

Cherry-Berry Tea Smoothie

Cherries help prevent inflammation, and blueberries offer antioxidants, including vitamins C and K. African rooibos is a tea that’s high in antioxidants and subtly sweet, but you can also use rose hips, ginger, or hibiscus.

Warm Stone-Fruit Salad

The peaches and cherries in this quickly prepared dessert are a great source of vitamins A and C. Vanilla beans are available in many large supermarkets and most specialty food shops; you can substitute one teaspoon pure vanilla extract for the one-half bean used below (don’t use imitation vanilla, which contains artificial ingredients).

Grilled Pork Tenderloin and Apricots with Honey Glaze

A mortar and pestle make easy work of crushing whole spices and peppercorns, but you can also use the bottom of a skillet or even the flat side of a chef ’s knife, pressing down firmly and working on a cutting board. Choose apricots that are ripe but still firm so they can hold up under the heat of the grill; brush the apricots and pork with the glaze as soon as they come off the heat. The glaze also tastes great on other grilled meats.

Mango-Banana Salsa

When you want a chile with distinctive flavor and a blast of heat for a salsa with Caribbean roots, the habanero is an obvious choice. It is native to the Caribbean basin, which includes the Yucatán region of Mexico. The flavor of habaneros has tropical overtones that perfectly complement fruit like mangoes and bananas. A little goes a long way—despite its diminutive size, it is the hottest of all chiles available in the United States and Mexico. This salsa makes a great condiment for pork, chicken, or fish.

Poached Apricots

When poaching delicate fruit, such as apricots and peaches, use a large shallow pan so the fruit can be in a single layer, rather than piled on top of each other. Also, keep the fruit submerged in poaching liquid with a round of parchment paper to prevent it from turning brown. After you serve the fruit, mix the poaching liquid with seltzer water to make a refreshing apricot fizz.

Peach Jam

Peaches are used in this very basic recipe for fruit jam, but you could substitute an equal amount of apricots or plums in their place. Add it to ice cream, or use it to fill a jelly roll cake such as the one on page 464. The jam is quickly made and can be kept refrigerated in an airtight container up to 2 weeks. If you prefer, strain the jam in a fine sieve before storing.

Fruit Galette

Making this rustic, free-form pie couldn’t be more elementary. You still have to know how to prepare the dough and roll it out, but after that it’s quite forgiving. The foldover crust requires less fuss than does a pastry shell baked in a pan. Just arrange the sweetened fruit in the center of the dough, then fold the border up and over the filling and bake. Make sure to taste the fruit before you begin, adding more sugar if it tastes very tart.

Glazed Fruit

A sparkling coating of clear glaze enhances the beauty of fresh fruit. Because this glaze is fragile, the fruit must be eaten the same day it is prepared. Use only fruit that is perfectly ripe and unblemished, and make sure that the fruit is very dry before glazing, since humidity breaks down the glaze. A display of glazed fruit makes a stunning centerpiece for a buffet table or dinner party.

Mango and Tomato Salsa

This piquant salsa should be prepared at least a few hours in advance to allow the flavors to fully develop. It can be stored in an airtight container in the refrigerator for up to 3 days; allow it to come to room temperature before serving.
