Cherry-Berry Tea Smoothie
Cherries help prevent inflammation, and blueberries offer antioxidants, including vitamins C and K. African rooibos is a tea that’s high in antioxidants and subtly sweet, but you can also use rose hips, ginger, or hibiscus.
Glazed Fruit
A sparkling coating of clear glaze enhances the beauty of fresh fruit. Because this glaze is fragile, the fruit must be eaten the same day it is prepared. Use only fruit that is perfectly ripe and unblemished, and make sure that the fruit is very dry before glazing, since humidity breaks down the glaze. A display of glazed fruit makes a stunning centerpiece for a buffet table or dinner party.
Concord Grape Sorbet
This sorbet gets its intense purple hue from Concord grapes, which have a deep blue-black skin. The longer you process it in the ice-cream maker, the lighter and fluffier your final product will be. Sugar cones are ideal containers for serving the sorbet al fresco.
Breakfast Focaccia with Grapes and Figs
Focaccia can be either savory or sweet. Topped with grapes, figs, and candied orange peel, it’s a great breakfast or brunch bread. This is one of the favorites from my cooking classes. You can substitute the grapes and figs with other fresh fruit such as strawberries and peaches. Keep the toppings light; don’t overload the focaccia.
Cranberry Fruit Salad
Min’s Cranberry Fruit Salad is the result of her crusade to bring vibrant colors and crisp textures to those brown winter meals—including plenty of the cheater pulled and chopped meats. Bright cranberries and fall fruits make a drop-dead gorgeous salad with body, color, and crunch. Smoked turkey, chicken, pork loin, and brisket are always better with a bright accessory. Freeze extra cranberries in the fall to whip this up throughout the winter.
Branzino Arrostito con il Mosto di Uve all’ Alfonso Longo
Alfonso cooks a dish much like this one, invented epochs ago by the Cilentini during the vendemmia—the harvest of the wine grapes. He tells the story of the fishermen who were also winemakers, who, after depositing the daily winemaking debris into the sea, set out their shore lines, much as they did every other evening. Serendipitously, they lured an abundance of fat, pewtery sea bass—branzino—the fish bewitched by the fermenting perfumes of the grape skins and seeds. The Cilentini then roasted the fish who’d fed on the grape must over cuttings from the vines. The flesh of the fish was scented, through and through, with essences of grape. Legend has it that the dish made voluptuaries of all who ate it. Stuffing the fish with cooked grapes likely gives it an even more luxurious savor than that taken on by his must-eating ancestors.
Grilled Duck Breasts with Crème Fraîche, Roasted Grapes, and Potato-Bacon Gratin
If you’ve never had grilled duck breasts, you’re in for a revelatory surprise. The contrasts are striking: the smoke of the grill against the richness of the duck fat, the juicy meat capped by crispy skin. At the restaurant, we buy Liberty Farms breasts (see Sources), which I have found superior to others in taste and texture. They raise a variety of duck called Pekin, a smaller, more compact bird (a single breast is perfect for one person) with a brighter, more delicate flavor and feel. You may have more luck finding Muscovy duck breasts, which are heftier, more steaklike. If you use Muscovy, you’ll only need four breasts to feed six people. Grilling duck breasts requires some attention. The fat from under the skin will inevitably drip into the fire, causing flare-ups, which can blacken the breasts if you’re not careful. If a flare-up occurs, use tongs to snatch the breasts off the grill for a few seconds, then return them once the flames have subsided. You may need to move them around the grill almost continuously as the fat renders out. The reward for this vigilance, however, is perfection—crisp golden brown skin and plump, succulent meat. An easier option is to sauté them in a cast-iron pan over medium-low heat, still skin side down, taking your time to render the fat from under the skin. Once the skin is crisp, which can take longer than you might expect, turn the breast over and cook a few more minutes, until medium-rare.
Grilled Pancetta-Wrapped Trout with Verjus, Crushed Grapes, and Fennel Gratin
Rainbow trout is a delicious option for fish-loving home cooks. It’s available year-round and won’t break the bank even when you want to feed a crowd. Have your fishmonger bone and butterfly the trout for you, leaving the tail intact and keeping the two fillets attached on the fin side. This preparation is a study in contrasts, a three-way complement to the flaky flesh of the trout. The blushing sweet-tart sauce is made with both crushed grapes and verjus, the juice of unripe wine grapes. (The French used verjus in medieval and Renaissance times in much the same way we use vinegar or lemon juice today.) Less acidic and more complex than most vinegar, the verjus’s refreshing fruitiness plays counterpoint to the salty cured Italian bacon wrapped around the trout. And finally, hidden within this lively package: rich, herbaceous sorrel cream, bringing us back to earth.
Spiced Sangria Roja
This is our favorite sangria recipe—it involves a little more effort than the usual sangria, but its flavor is far more complex than just wine mixed with orange juice. It really should be enjoyed with food, preferably tapas and small plates. It is an excellent companion to cheese and fish as well.
Sangria Blanca
White Sangria is something you really want in the summertime when nothing is going on and it’s hot and very humid outside. We developed this recipe about six years ago and have loved it ever since. Highly suggested for afternoon gatherings and finger foods.
Fruitful Red Slaw
When you need to add color and crunch to a dinner plate, this fruit-filled slaw is a pleasing option. I like using Granny Smith apples in this recipe, but use any crisp apple you have on hand. Make this salad before starting your meal’s centerpiece; it benefits from having time to let the flavors blend and the cabbage soften.
Mrs. Brown’s Grape Pie
Eric Brown, an employee at Mrs. Rowe’s Restaurant and Bakery for eleven years, asked his mother for his favorite grape pie recipe and she graciously offered it to us—for all true pie lovers and bakers are generous in spirit and love to share recipes. When Mildred Rowe was a child, she often picked wild grapes, which used to grow plentifully in the Appalachians. “Mother told us how they fought the wild turkeys for the grapes,” says Mike DiGrassie. This recipe calls for Concord grapes since many of us don’t live near a wild grape patch. It’s one of the few grape pie recipes that doesn’t require peeling the grapes.
