Pickled Vegetables

There is not much to peel in celery, just the strings that run along the ribs that can be annoying to eat. To remove them, I take a peeler and lightly run it along the back of the celery rib. Another way to remove them is with a paring knife. When you are trimming the base or the top of the stalk, don’t just chop away, but gently hold the stalk in your hands and cut from the inside of the stalk to the outside without cutting all the way through. Just before finishing the cut, pull the knife toward you and the strings should peel off down the length of the stalk.

Scungilli Salad

I like this and other seafood salads served at room temperature as soon as they are made, but most people like this dish chilled. If you are one of them, refrigerate it just long enough to chill it, a half-hour or so. Longer will dull the fresh flavors of the salad. Toss well and check the seasonings just before you serve it.

Tuna Melt

This sandwich is so old-school—and I love it. Using water-packed tuna and a reasonable amount of low-fat mayonnaise takes this diner-food classic off the “Do Not Eat” list.

Lemony Shrimp Salad

A healthy amount of celery gives this traditionally rich seafood salad a good bit of crunch. The lightened-up lemony mayonnaise dressing would be delicious with any cold, steamed, or poached seafood, including crab, scallops, and lobster.

Beef “Carpaccio” with Celery and Parmigiano-Reggiano

Paper-thin slices of lean, rare roast beef are healthy on their own, so keeping the toppings light but flavor-packed is the key to the success of this dish. Low-fat mayo amended with lemon juice and zest, crisp celery, and just a little bit of real Parmigiano-Reggiano—grated instead of shaved, for more coverage—does the trick.

Cajun Jumble-laya Stoup

This jumble is a lot like jambalaya, so I call it a Jumble-laya. This is one of those flexible recipes. You can substitute turkey or tender cuts of pork and beef for the chicken. Go all seafood by bumping up the amount of shrimp and adding crabmeat at the end to just heat it through. Andouille sausage is a spicy, smoky sausage with a flavor that packs a punch. It is used in Cajun-style food and is a staple in gumbo and jambalaya. Is okra not your thing? Substitute frozen defrosted French-cut green beans.

Draggers

I use this recipe (more like a method, really) as a standard party offering, and it’s one of my all-time favorite snackers. I eat mine with flatbread, but it’s good to spread these combinations on sliced seedless cucumbers, too.

Provençal Vegetable Stew

I loved and still miss Julia Child. She consumed life as robustly as she did a good, crispy skinned chicken. If I had ever had her over for lunch, I would have made her this simple stew.

Celery Root Encapsulation

These small orbs have big celery flavor from both the celery root centers and the celery stock that encapsulates them. The cream cheese gives the celery root a little extra body and tang. The gellan in the water bath reacts with the calcium in the celery root, forming a delicate gel around each orb. They may be heated in the celery stock and served warm like miniature raviolis, topped with brown butter, or hidden in a soup or stew as pockets of exploding flavor. You can also serve the orbs as single bites topped with shaved country ham and chopped celery leaves.

Clam Chawan Mushi

While most custard is made with eggs and dairy, classic Japanese chawan mushi is made using stock. There’s no real equivalent to chawan mushi. It is a light and deeply savory custard. The egg-to-liquid ratio is 3:1, designed so there is slightly more liquid than the eggs can hold. This way, as you dip the spoon into the custard, it releases some of its juices and creates its own sauce. Here we’ve used fresh clams to make the broth. Its buttery flavor speaks of our American heritage. We’ve garnished the custards with the clams, celery, and jalapeño instead of cooking them inside the custard, as would be traditional; this preserves the texture of the littlenecks. As with all steamed custards, it’s important to keep a close eye on things because the time difference between a smooth, silky custard and a grainy, scrambled mess is less than you might think.
