Stir-Fried Potatoes with Chiles
The first time I was served this I found it completely bizarre, as you may. But I loved it instantly. It’s from Szechwan but is equally at home with Asian and European dishes, as long as they have some guts. The quality of this dish is maintained for only a few minutes; as it gets cold, it becomes far less appealing. So—really—prepare it at the last minute and serve it immediately.
Drunken Shrimp
Because this dish has only two ingredients, finding the best shrimp is of utmost importance. In Hong Kong, where only live fish is considered fresh, live shrimp are common. Here you may find them at some fishmongers (especially in Chinese neighborhoods) and even in some Western supermarkets. The wine traditionally used for this dish in the south of China is Mei Kuei Lu Chiew and is quite strong and a little sweet; you can find it at many Chinese markets. Shopping hassles aside, this dish is worth trying. Serve it with an assortment of other Chinese dishes or as a starter.
Stir-Fried Clams with Black Bean Sauce
Simple and incredibly delicious. If you prefer a thick sauce, like that served at many Chinese restaurants, add cornstarch (as directed) at the end of cooking; it’s by no means necessary, however. Use the smallest clams you can find, preferably just an inch or so in diameter. Cockles, which are even smaller, are often the best choice; manila clams (which are brown) are also good. Serve this dish with Basic Long-Grain Rice (page 506).
Pressed Tofu Salad
There are two keys to this salad. The first is buying dry, pressed tofu (bean curd), which is sold at most Asian food markets and some natural food stores. It’s much firmer than regular tofu and has a dense, chewy texture and a brown skin. (If you can’t find it, use extra-firm tofu and press it yourself; see page 491.) The second key is allowing the salad to marinate long enough for the tofu to absorb the dressing. That part’s easy, but it does require advance planning.
Ginger-Scallion Dipping Sauce
A popular accompaniment for White Cut Chicken (page 273), this is also good stirred into soups.
Hoisin Chili Sauce
This is no more than hoisin sauce spiced up. It’s great with Spring Rolls (page 38) or Lumpia Rolls (page 68) and makes an acceptable substitute for Sesame-Chile Paste (page 591). Like every other bottled condiment, hoisin varies in quality: look for a jar that lists soy as the first ingredient and little more than that, sugar, chile, and spices. As for chili sauce, look for Vietnamese chili-garlic sauce, sold at almost every Asian food store; like hoisin sauce, it keeps indefinitely in your refrigerator.
Ginger-Chile Sauce
A good all-purpose fresh chile sauce, one that will keep for a couple of weeks in the refrigerator. Hot but flavorful; great for bland foods, such as Hainanese Chicken Rice (page 275).
Peanut Sauce
A complex, multipurpose sauce that is good enough to eat with a spoon; adjust the proportions to your taste once you get used to it. Serve it warm, with Grilled Satay (page 101), Fried Satay (page 100), Spring Rolls (page 38), or simply rice crackers, sold at many Asian and health food markets, or other crackers. See page 500 for information on Asian fish sauces like nam pla.
Egg Noodles with Spring Onions
A prime example of the simplicity with which you can successfully treat fresh Chinese egg noodles, which are available at many supermarkets.
Lion’s Head
These Chinese meatballs are so named because of their large size.When served in the center of cabbage leaves, the dish resembles a lion’s head and mane; or at least that’s what they say. In any case it is an unusual, delicious dish that’s easy to make.
Cold Noodles with Sesame Sauce
A perfect start to a Chinese meal, this can be prepared almost entirely in advance, varied in a number of ways, and even served as a main course if you like. Though it can be made with peanut butter (the natural kind, please, with no added sugar or fat), it’s easy enough to buy sesame paste (tahini) at health food stores, stores specializing in Middle Eastern or Asian ingredients, and even supermarkets. Sesame oil, which contributes mightily to the flavor of the finished dish, is a staple sold at Asian food stores (and, increasingly, supermarkets) and belongs in every refrigerator. Chinese egg noodles are sold fresh at almost every Chinese market, most Asian supermarkets, and even many ordinary supermarkets. Regular dried pasta makes a good substitute here.
Hot and Sour Soup
Much northern Chinese food is spicy, and this well known soup follows that pattern, deriving its heat from freshly ground pepper (use a lot of it) and its sourness from rice vinegar. Don’t be put off by the long ingredient list: this doesn’t take much time to prepare and is guaranteed to be better than the version served at most Chinese restaurants. Normally, I think thickening with cornstarch is unnecessary, but here it feels appropriate to give the soup its signature thickness; you can eliminate it if you like. Any of the dried ingredients that you can’t get at your supermarket can be found at almost any Chinese market.
Cream-Style Corn Soup
This soup has become popular in the kitchens of Chinese Americans in the past few decades. It’s best, of course, when you start by making creamed corn (see the second variation), but canned creamed corn—a concoction that Americans of various ethnicities and generations have long enjoyed (sometimes in secret)—allows you to make this tasty soup quickly at any time of year. See page 500 for information on Thai fish sauce (nam pla).
Chicken and Watercress Soup
One of the many recipes that bridge the short distance between Chinese and Italian cooking. The main recipe makes a light soup that complements stir-fry dishes well; the Italian variation is substantial enough to serve as a light main course.
Jook
At its most basic, jook is soupy rice, perhaps with some salt or soy sauce. Conceptually, this would not appeal to most Americans, and the notion of congee did not appeal to me for many years. Yet when it was first served to me I thought it miraculous—of course it had a few more ingredients—and it turns out to be even better when made at home, where you can cook the rice in stock rather than water. A great part of a Chinese feast, as well as a wonderful breakfast or lunch.
Yau Mei Faan
Hearty and warming, this is a popular winter dish in China, and rightly so. If you have a rice cooker, this is a good place to use it; it will allow you both to make the rice and to keep it warm. Even better is to wrap the rice in lotus leaves, as in the variation, which gives it a rich, smoky flavor and produces a dish often served at dim sum brunches. You can find lotus (or banana) leaves, as well as Chinese sausage and dried shrimp, at most Asian markets.
Fried Rice
Leftover rice is not only acceptable here but practically mandatory: fresh or warm rice does not fry well, but clumps together and sticks to the wok. You need cold, stale rice, which separates during cooking. If you have neither roast pork (even the Cuban Lechon Asado, page 375, will work) nor Chinese sausage, ham is a fine substitute. No meat at all is fine, too, of course; see the variations.
Egg Flower Soup
This improvement on the American Chinese restaurant classic has one thing in common with egg-drop soup: when properly made, the egg looks like delicate flowers. While many versions of this soup are thickened with cornstarch, I think the egg thickens the broth sufficiently. Like the Chicken and Watercress Soup on page 140, this has an Italian relative; see the variation. Any of these soups can be made more substantial by adding some shredded leftover chicken—or diced raw chicken, added while the stock is heating; don’t add the egg until the chicken is just about cooked.
Char Siu Bao
To make these classic steamed rolls at home, you might pick up char siu—barbecued pork—in one of the myriad of Chinatown restaurants that have roast meats hanging in the window. Or you can make the Barbecued Pork (page 373) and the buns a day or two later. Fortunately, the buns themselves are easy to make, and they can be made as much as a month in advance: let them cool to room temperature after they’ve steamed (which should only take 15 minutes or so), then line them up on a baking sheet, cover tightly with plastic wrap, and freeze. Once they are frozen you can transfer them to a freezer bag or other airtight container. To serve, reheat the dumplings in a steamer over an inch of boiling water for 5 minutes. Serve these as a starter or a snack.
Scallion Pancakes
This tough, chewy little pancake is a staple in China. Though the dough requires at least an hour of resting time, it’s easy to make. Cut it into small pieces and serve as finger food for a crowd or into larger wedges and serve at the table, as part of a general Chinese feast. Lard is the traditional (and best) fat for cooking these; substitute oil if you prefer.
