Week 9: Just Eat It

That's no good
I've tried broccoli here, I don't like it.
Now I really like Chinese food.
I really hate well-done meat, it's a shame.
I think the animal died for nothing.
I love sushi.
I hate lamb, I just had it for the first time.
I hate it.
One of my favorite foods is whiskey.
I don't like capers.
I don't know if it's a food, but it's good.
The culinary's policy on tasting is pretty simple,
taste everything, we taste everything before we serve it
and as we go.
Basically, your entire first year
is developing your palate, you have to try everything
to understand what it tastes like even if you don't like it,
you don't have to eat it again,
but you gotta at least try it once.
Everyone has a large supply of tasting spoons on hand
at all times, and then there's no way to know
if your food's coming out good unless you taste it yourself.
(country music)
[Announcer] Open up your mouth, number two, number two.
Number two open up your mouth,
four pluses for insect larva, insect larva.
(crowd mumbles)
In gastronomy class we had a pretty wild day of tasting,
where we had smoked black ants and salmon roe,
guava paste, and I pretty much would've ate all of it.
The smoked black ants were my favorite, actually.
I knew it was a bug, I knew it was a bug.
Before I came to school, I didn't like mushrooms
and I didn't like tomatoes that much, except in things.
In product knowledge class,
which is one of the classes you take in deep-la,
we have tasting, so I remember tasting the mushrooms alone
and thinking, Wow, these are really good.
When I finally had a really good, fresh tomato,
my mom used to grow them in her garden,
so I felt silly that it took me this long to figure it out.
And now I love mushrooms and I love tomatoes.
I can eat a tomato like an apple.
The cooking school has change the way,
mostly in terms of seasoning,
you definitely develop
a strong tolerance for salt here.
Bacon, bacon--
Bacon is about the best food on earth
You want my bacon?
He's Jewish and never ate bacon,
but now he's discovered he loves it.
It's really good.
Candy bars wrapped in bacon, think it was hot dogs,
wrapped in bacon, stuffed with cheese,
We're gonna have ribs wrapped in bacon,
that's something good right there.
Ribs wrapped in bacon, no.
Oh yeah.
I've done it.
(jazzy music)
Last year it was really hard for bakers, at least.
My girls, Anna and Stacy and I,
we used to go to the gym two times a day.
There were times that we were in bread class
that after class, we would be walking to the gym,
gnawing on a baguette, walking in the front doors.
Softer than anything packaged.
Definitely, even packaged hamburger rolls,
hamburgers would taste good on that bun (laughs).
I have to taste the raw dough
to make sure that it tastes okay,
but it doesn't taste anything like it will when it's done.
Even if you have an aversion to something,
it could be a popular flavor.
You may not like chocolate,
but you can't have a bakery where you don't sell chocolate.
[Woman] In order to taste it,
and get the idea of what it's supposed to taste like,
then you can sell these items in your place
and know, kind of have an idea of
what they should look and taste like.
You just have to try it,
you just have to eat a little piece of it.
So as long as you don't barf it back up, you're pretty safe.

[Man] That's our goat head.
Of course you have to eat your brains
with a plastic spoon, I'm using my fingers.
(onlookers talk and cheer)
[Man] Very good.
My palate has developed an incredible amount
since I've been at the CIA.
I've never tasted so much food in my life.
Good, I don't think I could eat anything else, too.
[Student] All I do, taste everything.
It's the only way to develop your palate
and as anyone knows a good chef has an incredible palate.
So I like to think that my palate's
well on it's way to excellence.
That's what we do.
