How to Dice

and this how to dice.
To dice means to cut your food into equal sized pieces.
This not only makes the food look better,
but it also ensures that they'll cook at the same rate.
Today we're gonna be dicing an onion,
which actually has a pretty specific technique to it.
An onion has both a root end and a stem end.
You want to keep that root end in tact.
That's what's gonna keep all of the layers together
in your onion.
We're gonna start by slicing off a portion of the stem
and this is gonna make it much easier to peel the onion.
Next we're gonna halve the onion,
cutting straight through the root.
Remove that outer layer.
Once you've halved and peeled the onion,
you're giving it a flat side
to rest against the cutting board.
This way it's not gonna roll around when you're dicing it.
So we're gonna start to dice our onion
by turning it so that the root end
is perpendicular to your cutting board.
Next, turn your knife on the side
and make long, equally spaced cuts across the onion.
After you've made these cuts,
you want to turn the root away from you.
Now we're gonna make equally spaced cuts
across the top of the onion.
Next, turn so the stem is again perpendicular to the board.
Now we're gonna cut directly across the onion.
And there you have it.
