Smothered Shrimp Tostadas
The shrimp in this recipe are cooked in a manner that is referred to as enchilado, or in a chile sauce. While the shrimp go well served atop crisp fresh lettuce and a crunchy tortilla, they can also be served over a bed of white rice with extra sauce drizzled on top. Either way, you will find the shrimp to be as versatile as they are delicious.

These mini tostadas are ideal because you get all the flavors in one bite. You can use any kind of chips, but the scoops that are shaped like little bowls hold everything together well.
Chickpea Fattet “Tostadas”
Hummus is everywhere in Mediterranean cultures. In Greece, it is generally served as an appetizer, swimming in olive oil, accompanied by pita triangles, feta cheese and olives. In the United States, it is also served as a dip for raw vegetables, and often has other ingredients, such as roasted red peppers or pine nuts, blended right in. The basic formula is pretty simple: chickpeas (garbanzo beans), tahini (sesame butter), lemon juice, salt, and olive oil. Proportions of the basic ingredients may be varied in accordance with your taste. Less garlic, more garlic, less tahini . . . whatever. Play around with it and see what you get. Fattet is a sort of Middle Eastern layered casserole or salad. Taking a left turn at traditional, it occurred to me that you could easily make a sort of Middle Eastern tostada using some of the common ingredients found in the dish.
Coriander Chicken Tostadas with Refried Beans and Grilled Fennel
Sue Torres puts a creative spin on Mexican flavors at her Manhattan eatery, Sueños. According to Torres, many people overcook chicken breast because they're worried about salmonella. "You're not killing bacteria, folks —you're killing flavor and moisture," she says. Because it is easy to overdo the heat with the lean white meat, it's worth using an instant-read thermometer to check for doneness (the thickest part of the breast should reach 165°F). What to pair with that perfectly cooked meat? Torres has an idea. "Chicken works well with so many seasonings , but coriander gives it a tuxedo," she says .

Crab Tostadas
I often wonder if tostadas—crisp tortillas mounded with your choice of topping—were the first version of modern-day nachos. If so, these would definitely be called "supreme." Crunchy tortillas are layered with slices of creamy avocado and topped with a zesty crab salad to make the perfect appetizer.

Blisters on My Sisters
This name came from a Frank Zappa song called "Jewish Princess" where he says: "I want a dainty little Jewish princess with a couple of sisters who can raise a few blisters." I decided to make something called Blisters on My Sisters, and when I went to the kitchen to make it, this is what I came up with. I make the rice and beans mixture in a bowl because all my ingredients are hot all the time, but since you are probably starting with cold ingredients, I gave you directions for mixing the ingredients together over heat.
