And who, pray tell, is this exotic culinary adventuress named Bella? My eight-year-old Portuguese water dog. For a long time now, she's loved carrots. She literally comes running every time she hears the carrot peeler come out of the drawer. My husband and I thought, "Hmm, that's different for a dog," and played the approving parents. Recently, she's expanded her palate to sweet potatoes. No sooner do they hit the counter than she's singing and dancing around my feet. I quarter and square off the potatoes and fling the ends at her, and she's been known to get some serious hang time as she leaps for them. Seriously, Air Bud's got nothing on Bella. Maybe she heard about how healthful sweet potatoes are: their natural sweetness is perfectly balanced with high fiber content, slowing the rush of sugar into the bloodstream, which is great for the vascular system, and for mood. My experience says that's true; whenever I make this salad, Bella's awfully happy.

Wilted Kale and Roasted-Potato Winter Salad
For those who’ve not already jumped on board, it’s time to embrace kale! It stars in this hearty potato salad, versatile enough for a stand-alone meal or an accompaniment to pork tenderloin. Strip the kale quickly by turning the leaf upside down, grasping the top of the stem with one hand, and wrapping the other hand around the stem just below. Pull the leaf down with your lower hand; it will easily peel away. Then, save time by preparing the tahini dressing as the seasoned potatoes roast in the oven.
Dilled Potato and Pickled Cucumber Salad
Jazz up a traditional summer staple with this extra-fresh side dish. Usually potato salads are dense dishes drenched in mayonnaise, but this version provides a boost in flavor and texture with cucumbers, onions, radishes, and dill. Be sure to leave ample time for preparation, as the recipe requires you to pickle the cucumbers overnight. Prepare an extra batch; the pickled cucumbers make a great snack on their own and add a satisfying crunch to other salads and sandwiches and will last in the refrigerator for several days.
Sweet Potato Salad with Spicy Peanut Dressing
