Chinese Egg Drop Soup with Noodles

Though egg drop soup is not traditionally made with noodles, we love the texture and substance they add.

Gnocchi Souffles

October is the beginning of white truffle season, but if you have trouble finding white truffles, don't despair — these soufflés are delicious without them. Much of the deep flavor of this dish comes from Bra Tenero cheese. We tried lots of alternatives, and American Münster was the closest, though it won't turn the same golden brown color.

Asian Hot Pot with Chicken and Sweet-and-Spicy Dipping Sauce

For this traditional Asian fondue, raw strips of chicken are cooked quickly at the table in a pot of boiling broth. Guests then place the cooked chicken strips on lettuce leaves, add noodles and whatever garnishes they choose, roll up the leaves and complete the packages with a bit of the Sweet-and-Spicy Dipping Sauce. When all of the chicken has been eaten, divide the remaining broth among the guests.

Chow Fun with Barbecued Pork and Snow Peas

This recipe incorporates two popular foods from the Toi San region of southern China: One is the Chinese boneless barbecued pork strips known as cha siu, and the other is fresh rice noodles. The latter are sold in 1-pound packages, either as rumpled sheets that must be cut into strips or as precut 1/2-inch-wide strips.

Crispy Shredded Duck and Noodle Salad

Bean-Thread Noodles with Shiitake and Vegetables

The follow recipe is an adoption of "chicken long rice," a frequent accompaniment to roast pig at a luau. Although Chinese in origin, this dish has been enthusiastically adopted by all Hawaiians. "Long rice" refers to bean-thread noodles that are cut into short lengths. We eliminated the chicken traditionally included in this recipe to make it a lighter side dish for our Grilled Teriyaki Pork Chops with Pineapple Papaya Relish . Can be prepared in 45 minutes or less.

Shrimp Rice-Paper Rolls with Vietnamese Dipping Sauce

Sweet, salty, and spicy, nuoc cham is the indispensable sauce of Vietnam's cuisine. It's a favorite dipping sauce for spring rolls and for fresh rice-paper rolls such as these.

Rice Noodle Soup with Ham and Lettuce

The long noodles in this soup — representing longevity — are meant to be slurped up. In Chinese culture, cutting them would symbolize cutting one's life short. This recipe requires a whole chicken for its rich broth and makes double the quantity necessary. Reserve 1/2 cup stock for the Broccoli Spears in Garlic Sauce and freeze the remainder. After setting aside the breast meat for the soup, save the rest of the chicken for another dish. The reserved cilantro leaves can be used for the Steamed Striped Bass with Ginger and Scallions. Active time: 30 min Start to finish: 3 3/4 hr

North Shore Chicago Hadassah's Lick-Your-Fingers Kugel
