Malted milk powder adds toasty, caramel-like undertones to this warming winter drink. Splurge on a good vanilla, like Heilala, since its the primary flavoring here.

Ingredients

5 cups whole milk
¾ cup (105 g) malted milk powder
⅓ cup (packed; 71 g) dark brown sugar
2 tsp. vanilla extract
¼ cup light rum (optional)
Freshly grated nutmeg for garnish

Preparation

  1. Step 1

    Bring 5 cups whole milk to a simmer in a 4-qt. heavy saucepan. Transfer 1 cup hot milk to a blender and set aside.

    Step 2

    Whisk ¾ cup (105 g) malted milk powder and ⅓ cup (packed; 71 g) dark brown sugar into remaining hot milk until dissolved. Remove from heat and stir in 2 tsp. vanilla extract and ¼ cup light rum (if using).

    Step 3

    Blend milk in blender at high speed until foamy, about 1 minute. Divide malted milk among 4 mugs, then top with foamy milk and sprinkle with freshly grated nutmeg.
