Simply Sautéed Spinach

Ingredients
1 tablespoon olive oil
1 garlic clove, finely chopped
2 bunches spinach, tough ends trimmed
Kosher salt, freshly ground black pepper
1 teaspoon finely grated lemon zest
Preparation
Heat oil in a large skillet over medium-high heat. Add garlic and cook, stirring, until fragrant, about 30 seconds. Add spinach, season with salt and pepper, and cook, tossing, until beginning to wilt. Add 2 Tbsp. water and cook, tossing, until tender, about 2 minutes. Stir in lemon zest and season with salt and pepper.
