These are some of my favorite muffins. The quinoa flour and cornmeal give them a beautiful golden color and a nice texture, a perfect combination with the juicy blueberries.
Zucchini Date Muffins
I keep a batch of these low-fat muffins in my freezer at all times. They stand in as cupcakes when my daughter, Sofia, asks, “What’s for dessert?” For a quick and easy low-fat frosting, spread a little Greek-style yogurt over the top, drizzle with agave nectar, and add a sprinkle of cinnamon. Perfect!
Cranberry Orange Muffins
Cranberry and orange is a classic, tangy flavor combination. Stock up and freeze fresh cranberries when in season for baking throughout the year. For a sweet and chewy alternative, try fruit-sweetened dried cranberries, which are similar to raisins.
Sweet and Savory Yogurt
Yogurt is a wonderful international culinary staple that’s been subverted by American agribusiness. Contrary to popular belief, genuine yogurt is anything but the thick, overly sweetened blend you’re likely to find in the refrigerated section at your local grocery store. Designed as quickie substitutes for breakfast, too often they’re laden with copious sugar for a rapid ride on the glucose express. Real yogurt—the healthier version known to the rest of the world—is generally much lighter. It’s also served in a wider variety of contexts, such as Indian raitas, served as a condiment, and Greek tzatziki, a combination of cucumbers and yogurt served as a dip, condiment, or spread. Yogurt (the name is Turkish) is meant to refresh, and this version is an ideal topping on cucumbers, lamb, or Middle Eastern Chickpea Burgers (page 112). Triple Berry Smoothie
A lot of people wonder why adding healthy items like flaxseeds to a decent-tasting smoothie destroys the taste. The answer is that the smoothie recipe didn’t take into account the items you’d want to add. The normal fix is to add a ton of sweetener, but I don’t agree with that approach, especially in recipes for cancer patients. But the berry blast of this smoothie plays well with the vital flax and whey. The abundant antioxidants make this smoothie one for the books.
Curried Chicken Salad
This salad was inspired by one of those gorgeous, colorful Bollywood flicks that offer a feast of singing, dancing, and romance. I love Indian food, as it was my first real introduction to all things curry. Only much later did I learn that turmeric, a typical spice in curries that gives them a yellow tint, has tremendous antitumor and anti-inflammatory properties. And to think, I loved it just for its taste! Here, I was hankering for a swirl of flavors with an Indian feel. The chicken makes a great starting point because it’s full of protein and amenable to all sorts of accessorizing. In this case, the mango and raisins play delightfully off the curry spices.

Requiring no cooking and no blending, this soup takes full advantage of the lush fruits of midsummer.
Shrimp Masala with Rice
Traditional masala spices are dry-roasted, which releases the aroma. Masala also calls for pureeing the onions and tomatoes together in a blender with the yogurt mixture. Here I offer a simplified masala, designed to be quick and easy. Of course, you may always vary any recipe to suit your own preferences. You can purchase masala spice mix in a specialty food store, or you can make your own. Combine 1/4 teaspoon garam masala, 1/4 teaspoon curry powder, 1/4 teaspoon ground coriander, 1/8 teaspoon turmeric, and 1/8 teaspoon cayenne. Keep leftover mix tightly covered in a dark cabinet. Substituting soy yogurt or light coconut milk is fine. Coconut milk used to get a bad rap for being high in saturated fat, but now we know it has the good kind of saturated fat. Turmeric is an anti-inflammatory herb, thought to be good for diseases that cause internal swelling, such as multiple sclerosis, fibromyalgia, and arthritis.
Tandoori Salmon with Kale
Garam masala is the basic mix of Indian spices. You can purchase it at ethnic or health food stores. Use your favorite chile pepper in this dish. Jalapeños work fine, as do Anaheim or other green chiles, or even red pepper flakes if that’s what you have in your cupboard. For additional garnishing, use sprigs of fresh mint or cilantro. If your diet is dairy-free, try this recipe with plain soy yogurt.
Cucumber Raita
This is an Indian sauce introduced to me by Madhur Jaffrey years ago, and I have been making it steadily ever since. It is, of course, good with almost any Indian curry dish, and I find that it is also delicious with cold chicken, lamb, salmon, or shrimp—in other words, an excellent way of dressing up leftovers.
Chile Chicken Wings with Creamy Cucumbers
These may resemble traditional Buffalo wings in appearance, but a blend of soy sauce, tahini, ginger, garlic, and Asian chile sauce (available at Asian markets) makes these wings major-killer. This sauce is bangin’ and can be used on grilled anything. Instead of typical celery and blue cheese, a cool side of cucumbers, Greek-style yogurt, and fresh mint finishes this dish.
Almond Braised Lamb Shanks with Toasted Almond Salad
This out-of-the-ordinary stew is seriously good and its enticing aroma seductive. The sauce is smooth and complex: cinnamon, mustard, cumin, fenugreek, and cardamom all add up to an intriguing flavor that really lingers. The parsley-almond garnish adds brightness to the dish. Sweet, nutty, and crunchy, with layers of Indian spices, this killer recipe is a musttry. Serve it over basmati rice.
Grilled Leg of Lamb with Salsa Verde
Bone-in leg of lamb has marvelous flavor and is a traditional roast for festive family gatherings. There is a great deal of versatility in this cut, but my favorite way to prepare it is on a grill. Slow cooking on a grill keeps the lamb really tender and moist while adding an awesome smoky taste. The yogurt and lemon marinade helps carry the deep flavors of the lamb and also gives the meat a nice crust. The lamb needs to marinate for several hours, so plan accordingly. I love this with Greek Farro Salad (page 79), a bright, refreshing complement to the charred lamb.
Curried Lentil Stew with Greek Yogurt
This hearty vegetarian stew has special memories for me. I used to make it almost every day when I was broke, back when I was trying to open my first restaurant. And yet I never get tired of it. This dish has layers of flavors, comes together pretty rapidly, and leaves you fully satisfied.
Pan-Roasted Striped Bass with Tunisian Chickpea Salad and Yogurt Sauce
This Mediterranean-inspired dish not only is light and healthy, but also has depth of flavor with a contrast of textures and temperatures. Most home cooks tell me they’re intimidated by cooking fish with skin on; they find it tears or doesn’t crisp up as it should. There are two keys to success: one is patience and the other is a well-seasoned cast-iron pan, preferably one that has gone through generations of use. The second alternative is to cheat and use a nonstick frying pan.
