Smoked Salmon, Hard-Boiled Egg, Tomatoes, Greens and Caper-Onion Mayo
This is another one of those fabulous "adult sandwiches." It's hearty enough to pack for work, yet it's perfectly appropriate for a luncheon or brunch. The hardest part of this recipe is assembling the ingredients: that's how easy it is, yet it tastes like a gourmet sandwich you'd find on a restaurant menu or at a specialty deli. Thanks to the salmon, the sandwich is loaded with omega-3 fatty acids that our body can't make on its own; it's high in protein and delivers a whopping amount of nutrients per calorie. In other words, it's the heavyweight nutrition champ of sandwiches!

Hot Smoked Salmon with Apples, Dried Cherries, Hazelnuts and Greens
The Pacific Northwest is understandably known for its outstanding salmon, but Washington State and Oregon are also among the country's leading producers of apples, cherries, and hazelnuts—hence the pairing of this nutty apple and cherry salad with hot-smoked salmon. The full-flavored acidity of apple cider vinegar highlights the sweet-tart combination of Granny Smith and Gala apples as well as the dried cherries; the vinaigrette really helps cut the richness of the salmon.

Smoked Salmon Smørrebrød
Smørrebrød only sound complicated. "You can put whatever you want on them," says chef Nicolaus Balla, who serves the Scandinavian open-face sandwiches at San Francisco's Bar Tartine. Simply slather a creamy spread like butter or sour cream on dense rye bread. Top with classic combos like roast beef and crisp onions, or smoked salmon and scallions—and since they're on view, make sure they look good. Finish with herbs, lemon zest—anything, really, except a second piece of bread.

Any Smoked Fish Party Spread
These days quality hardwood-smoked salmon and trout in convenient Cryovac packages are easy to find. What we never expected was that even canned tuna, a product that has required little contemplation beyond water- versus oil-packed, would go through a major transformation with the new retort vacuum-packed foil pouch. No can opener, no draining, and new flavors to play with. A pouch or two of hickory-smoked tuna works for this spread. When we say any fish, we mean any fish or any shellfish, like smoked oysters or clams. We usually use a frozen pack of R. B.’s patio-smoked, fresh-caught Rhode Island bluefish courtesy of his friend and neighbor Chappy Pierce. Vary the ratio of seafood to cream cheese to your liking. If things taste fishy, add lemon juice. Serve the spread mounded in a bowl garnished with capers and lemon slices. We prefer plain water crackers for serving.
Towers of Bagel Toasts, Smoked Salmon, and Herbs
When we have a lot of people over for brunch, I love serving my version of a New York classic. Each person can easily pick up a stack—only half a bagel—from a tower and not get full on too much bread. You can even cut each tower into quarters so your guests can pick up a bite. I like using H&H poppy seed bagels, but feel free to substitute your favorite bagel.
Box of Pullman Loaf
George Pullman was a fervent industrialist and a train man. He created the sleeping car, the hotel car, and eventually the dining car. Some say the Pullman sandwich loaf was designed after his cars. Others say it was designed to fit into the cube-shaped train shelves. Either way, this is an easy dish we would love to eat for breakfast—on the train, of course. This recipe makes one serving; use up the rest of the Pullman loaf making more boxes.
Smoked Salmon Toasts with Malt Vinegar Syrup
The Irish are famous for their smoked salmon, so it's a natural for a St. Patrick's Day party. Of course, you don't have to use Irish smoked salmon for these toasts; any coldsmoked salmon will work well, but if you're feeling flush, you will be treating yourself to salmon that is supersilky in texture with a distinct smokiness that comes from spending time near smoldering hardwoods such as oak and beechwood. If topping your salmon with anything other than a gentle squeeze of lemon seems like heresy, don't knock our tangysweet malt vinegar syrup until you've tried it. You just might get hooked.

Smoked Salmon-Chile Mulato Sauce
The smoked salmon gives this sauce great texture and is also a wonderful flavor complement to the smokiness of the chile mulato. Try the sauce on pasta or with a char-grilled chicken breast.
Egg-White Frittata with Lox and Arugula
Frittatas are the perfect centerpiece for a brunch spread because they can be served warm or at room temperature. This one brings two classic brunch favorites—lox and eggs—together into one very attractive dish. Serving bagels on the side, though decidedly not Italian, is a nice option.
Smoked Salmon and Apple Carpaccio
When I go to a restaurant and want something light, I immediately look to the carpaccios and crudos, which often feature marinated raw fish. Smoked salmon can deliver the same light, clean flavors but without the worry of serving raw beef or fish at home. I like to arrange the salmon and apples on a platter and let guests pile them onto slices of bread themselves; the color of the salmon is simply stunning next to the green apples, which also contribute crunch and freshness.
Buckwheat Crêpes
Everyone knows about sweet crêpes (page 645), but visitors to France quickly become addicted to these—the classic snack food of Brittany—especially the ham-and-cheese variation. Traditionally, the batter sits for an hour before starting to cook. As long as you plan ahead a bit, that shouldn’t be a problem. But in a pinch you can skip the resting period—it doesn’t make too much difference—and overall these are easy to make and great as savory starters or a light lunch or supper.
Smoked Salmon Spread with Lemon and Herbs
Here’s a great way to use a small amount of smoked salmon to good advantage. Fresh herbs and lemon brighten the taste, and the cream cheese acts as a medium to carry the rich flavors. I love to serve this spread on toasted pumpernickel bread, atop tiny baked fingerling or new potatoes as an hors d’oueuvre, or as an open-faced sandwich with thin cucumber slices and watercress.
Smoked Salmon Beignets with Brandied Tomato Sauce
Here’s one I stole from my friend, mentor, and sometimes tormentor from Louis XVI Restaurant, Daniel Bonnot. He taught me how to make these about twenty-five years ago. Beignet is essentially just a fancy French word for a fritter. In New Orleans, people have been known to subsist on beignets and coffee alone. This is not advisable. Feel free to substitute chopped crayfish tails for the smoked salmon—both versions are dangerously addictive.
Asparagus Flan with Smoked Salmon–Potato Salad
Flan is essentially custard—the creamy melding of milk and eggs in what has proved to be a delectable revelation: you can make a savory flan out of virtually any vegetable. We do several savory flans at my restaurants, including mushroom and carrot, but its delicate flavor and pale green color makes asparagus flan my hands-down favorite. A potato salad made with smoked salmon (which is great on its own for lunch or brunch) is a stylish partner, but you can easily serve this flan with toasted slices of French bread and Grana Padano (or your favorite cheese) and a simple green salad with tomatoes.
Puffy Duck Egg Frittata with Smoked Salmon
I’ll admit to a tendency toward obsession, especially when it comes to food, as my experience with duck eggs proves. I bought my first dozen a few years ago at the Saturday farmers’ market at 14th and U Streets in Washington, D.C., and from the first time I fried one, I was pretty much hooked, buying duck eggs and only duck eggs and going through a dozen every week or two, at least while the ducks were laying. I’ve since veered back toward moderation, especially after remembering that these richer, more flavorful eggs are also higher in saturated fat and much higher in cholesterol. Still, I like to splurge every now and then, and this puffy frittata is one of my favorite ways. It also illustrates the magical properties of egg whites as a leavener; the simple process of separating whites from yolks, beating the whites to the soft-peak stage, and folding the two together results in a light-as-air texture, something between a frittata and a soufflé. Nonetheless, you can use these same ingredients in a more straightforward frittata; instead of separating the eggs, just follow the method for the Mushroom and Green Garlic Frittata (page 32). And if you can’t find duck eggs, chicken eggs work fine here, too.
