Short Ribs Braised in Ancho Chile Sauce
Inspired by chef Robert Del Grande of Cafe Annie, in Houston, we combine the succulence of short ribs with the bitter undertones of coffee and the mellow heat of two kinds of chiles, along with maple syrup and lime juice to cut the spiciness. We recommend serving these meltingly tender ribs over soft polenta.
Taiwanese Beef Noodle Soup
This rich soup is hearty enough to serve as a main course. Dried tangerine peel and star anise impart an exotic note, and pickled mustard greens provide contrast to the beefy broth.
Rich Beef Broth with Carrot
Having broth as a tapa is an old custom that's becoming popular again in both Spain and the U.S. Food editor Ruth Cousineau set out to make just the broth, but the resulting short rib meat was so delicious (even after cooking in broth all that time) that she didn't want to waste it, so she came up with a use for it in a short rib terrine. This recipe is traditionally made with oxtails, but we substituted short ribs and beef shanks because they're easier to get in most supermarkets. If you'd like to try it with oxtails instead of ribs and shanks, use 6 pounds of oxtails (preferably from grass-fed beef, such as Niman Ranch).
Short Rib Terrine
If you only have sweet Spanish smoked paprika on hand, you can mix 1 1/2 teaspoons of it with 1/8 teaspoon cayenne as a substitute for hot Spanish smoked paprika.
Coffee-Braised Short Ribs with Ancho Chile
Relish each step of preparing coffee- and chile-braised short ribs: Searing a brown crust on the ribs before they bake adds a deep caramelized flavor; sautéing the aromatics (onions, peppers, garlic) in the drippings makes the sauce base really fragrant.

Braised Short Ribs with Dijon Mustard
Chefs know this secret: Short ribs are long on flavor. Their rich, meaty taste makes them a perfect choice for cooks who want full-bodied food with very little fuss. This dish was inspired by a recipe in Daniel Boulud's Café Boulud Cookbook. The chef begins by reducing a great deal of red wine. We adopted his technique, which produces such a rich and delicious sauce, it tastes as if many days—and ingredients—were required to produce it.
Like many people, we love to serve short ribs with a comforting side dish of mashed or roasted potatoes.
