Tilapia Etienne

Famous dishes have historically taken their names from the chefs who invented them—Sole Dugléré, for example, was named after French chef Adolphe Dugléré. As a consultant to Finger Lakes Aquaculture, distinguished local chef Etienne Merle, who once ran well-loved Ithaca restaurants L’Auberge du Cochon Rouge and Valentine Café, created a recipe for Dugléré-style tilapia. The addition of curry and herbs gives the dish Etienne’s unmistakable touch.

Lièvre à La Royale

In Quebec, only two real game meats can be legally sold, caribou from the great north and hare snared in the winter. The taste of these meats is surprising at first, the incarnation of the word “gamey,” but like truffles or blue cheese, it becomes what you crave. Many little classic Parisian restaurants offer this dish in season, and there are as many ways to cook it as there are chefs. The basics are wild hare (lièvre), red wine, shallots, thyme, and garlic. The rest can vary. At Joe Beef, we use both hare and rabbit. D’Artagnan (www.dartagnan.com) ships in-season Scottish game hare that we have tried. It’s gamey all right, but it’s the real McCoy. If you can’t find a hare, you can use all rabbit. Count on two days to prepare this recipe. It should yield six to eight portions, and it freezes well.

Époisses De Bourgogne À L’echalote

If Parmesan is the king of cheese, Époisses is the cultural attaché. It’s smelly in a way that makes you proud to like it. It’s also red-wine compatible and awesome on a piece of steak. A washed-rind cheese, Époisses is made from milk from Burgundian cows and washed with the local marc de Bourgogne. It is crucial that you buy a good Époisses, and, in fact, only one or two brands make it to the United States and Canada. Sniffit before buying, and avoid one with a horse urine–window cleaner smell. Remember, too, warming up the cheese only amplifies the aroma. Sometimes Gilles Jourdenais at Fromagerie Atwater gets in tiny individual Époisses, which we try to use whenever possible. This dish, which combines the cheese with shallots, used to be the classic Joe Beef drunk staff meal at 4 A.M. Eat it with toasted bread, a few rosettes of mâche, or on top of steak.

Oven-Seared Shrimp with Shallots, Chiles, and Thyme

In this fast and easy recipe, the shrimp release their juices and create a delicious sauce in the pan. Using unpeeled shrimp with heads on does make it a little messier to eat, but the results are finger-licking good. If serving this as a main course, a bed of couscous or steamed rice is a nice accompaniment to help soak up the sauce.

Braised Chicken with Shallots

Thighs are the best cut for braising, as they become very tender when simmered for a long period. This dish is even better the next day, once the flavors have had a chance to meld.

Turkey Gravy with Shallots and Mushrooms

One-Pot Roast Chicken

Thomas likes to roast chicken and vegetables together in what he calls one-pot cooking. The vegetables make a bed for the chicken and prop it up so that it browns nicely, and the juices from the roasting bird permeate through the vegetables that caramelize on the bottom of the pot. He also removes the wishbone before cooking to make carving the roasted bird easier.

Salsa Verde

A simple uncooked sauce of fresh herbs brings aliveness to the table. Salsa verde (green sauce) is a versatile sauce of parsley and olive oil flavored with shallots, capers, and lemon zest. The basic recipe can be enhanced with additional ingredients to make it more pungent and complex. It will brighten and complement many dishes, especially grilled vegetables, meat, and fish.

Farro Salad with Shallots and Parsley

Farro is a delicious, nutty-tasting whole grain with a flavor like a cross between wheat berries and barley. It cooks quickly (almost as fast as rice) and can be served boiled, plain, or marinated in a salad; or it can be prepared in the same way as a risotto. I usually cook 1 1/2 cups of farro at a time. I serve half of it warm as a side dish and the other half the next day as a salad.

Basic Vinaigrette

It’s hard to imagine five minutes in the kitchen better spent than those spent making vinaigrette, the closest thing to an all-purpose sauce. The standard ratio for making vinaigrette is three parts oil to one part vinegar, but because the vinegars I use are mild and extra virgin olive oil is quite assertive, I usually wind up at about two parts oil to one part vinegar, or even a little stronger. Somewhere in that range you’re going to find a home for your own taste; start by using a ratio of three to one and taste, adding more vinegar until you’re happy. (You may even prefer more vinegar than olive oil; there’s nothing wrong with that.) Be sure to use good wine vinegar; balsamic and sherry vinegars, while delicious, are too dominant for some salads, fine for others. Lemon juice is a fine substitute, but because it is less acidic than most vinegars—3 or 4 percent compared to 6 or 7 percent—you will need more of it. The ingredients may be combined with a spoon, a fork, a whisk, or a blender. Hand tools give you an unconvincing emulsion that must be used immediately. Blenders produce vinaigrettes that very much resemble thin mayonnaise in color and thickness—without using egg. They also dispose of the job of mincing the shallot; just peel, chop, and dump it into the container at the last minute (if you add it earlier, it will be pureed, depriving you of the pleasure of its distinctive crunch). This is best made fresh but will keep, refrigerated, for a few days. Bring it back to room temperature and whisk briefly before using it.

Creamed Parsley Sauce

Parsley is the most reliable and underrated herb in the western culinary world. Although we’ve come a long way from the days when its major role was as a decorative sprig on the side of a plate, we still don’t use it in the kinds of quantities we could. Here it is cooked like a vegetable like spinach, really—to create a delicious, fresh-tasting sauce that I frequently serve over pasta but that also makes an interesting foil for simply grilled or broiled chicken breasts.
