Rosemary Roasted Potatoes with Black Olives
You can almost build a meal around this simple, delicious side dish. Once you’ve got the potatoes in the oven you have plenty of time to make a bountiful salad. You can also put Teriyaki Tofu Steaks (page 62) or store-bought veggie burgers in the oven at the same time for a no-fuss “meat and potatoes” kind of meal.
Warm Mediterranean Potato Salad
This flavorful warm salad can be made any time of year, its seasonal personality lent by either rosemary (for cooler months) or basil (for warmer weather). It’s a fairly substantial salad, so it’s good served with a straightforward protein dish like Tempeh Fries (page 78), Cornmeal-Crusted Seitan (page 63), or BBQ-Flavored Skillet Tofu (page 62).
Mini Chicken Potpies with Herb Dough
It’s hard to improve upon a standard, but this recipe for chicken potpie does just that. Each individual serving is topped with a ruffle-edged round of herb-flecked dough. The filling contains all the usual, well-loved components, but the creamy sauce is brightened with lemon zest.
Creole Potato Salad
We make this salad every Sunday at the restaurant. I like to cook the potatoes til they’re soft so the dressing can penetrate deeply. But the true secret to our potato salad is the Zatarain’s mustard we have shipped up from New Orleans (see Resources, page 175). Sure, you can use another coarse-grain mustard, but once you’ve had a real Creole mustard, nothing else will give you satisfaction.
Asparagus, Red Pepper, & Potato Salad
When spring hits and the asparagus comes into season, I can’t wait to eat this simple potato salad. Because it’s made without mayonnaise, it can be held at room temperature where the flavors can really develop. It’s perfect picnic food. Once the asparagus goes out of season, try making it with a pound of green beans instead.
Beth’s Hash-Brown Potato Casserole
There are as many versions of this casserole as there are southern cooks and church cookbooks. Beth’s is a compilation of several. I like the potatoes shredded instead of cubed and not as much butter as some recipes have (don’t worry, there’s still plenty!).
Real Mashed Potatoes
If I had to name the dish that is requested most often at home it would be this one. My family will eat almost anything if they can have these whipped potatoes on the side! I have been asked many times what secret ingredient makes this recipe so good. The answer is—potatoes! You’ll be amazed at how simple it is to make really great mashed potatoes. Everyone has his or her own preference, but I like to use red potatoes, as I think they are lighter and don’t get gummy like other kinds can. I also peel the potatoes completely, leaving no trace of skin, but if you like the skins, simply leave them on. For this recipe alone, I would encourage everyone who doesn’t have a pressure cooker to get one. They are safe and save a ton of time in the kitchen. A pressure cooker cuts the prep time for this recipe from 1 hour to 15 minutes.
Home-Style French Fries
I’m not sure if I ever had a store-bought French fry before high school! Mama made these home fries and served them with fresh-off-the-grill burgers. They’re the perfect side for Herb’s Fried Catfish (page 106) and Mama’s Cornmeal Hushpuppies (page 140).
Gwen’s Old-Fashioned Potato-Beef Casserole
My family likes casseroles because they get the whole meal in one pan, and this is a favorite. It was probably born as a result of my mom’s trying to put food on the table on a budget, and while a lot of people cook with ground beef because it is relatively inexpensive, I would pay big bucks to get to eat this every now and then! This is similar to a shepherd’s pie, but a bit heartier, I think.
Potato Salad
When it comes to potato salad, you like what you like. This recipe is mayonnaise-based, but if you like a mustard-based potato salad, just experiment a little. Add some yellow mustard and leave out a little bit of the mayonnaise. Make these recipes your own by finding out what works for you. Our traditional potato salad uses peeled potatoes, but unpeeled work too, and the skins add some color to your dish.
Winter Vegetable Soup
Some recipes in this book have been passed down from generation to generation, and some are newer recipes discovered in the past few years that have become family classics. This is one of the old-timers. My mom used to make this soup when I was a child, and I remember how much my dad loved it served over biscuits. For me, when a recipe has a great memory attached to it, it tastes even better. I make this soup at the first sign of cold weather every year and serve it poured over Buttermilk Cornbread (page 154).
Jack’s Brunswick Stew
My daddy was a great cook, and many of the recipes in this cookbook are his. If there was a fund-raiser in Monticello, people would always ask, “Is Jack making the Brunswick Stew?” or “Is Jack cooking the chickens?” before they bought their tickets. The food was usually prepared outside in very large quantities with the help of members of the sponsoring organization. Brunswick Stew is one of those classic southern dishes that varies from region to region, but I’ve never had Brunswick Stew that tasted like my dad’s. In his version, everything is ground through a food grinder, so it’s more like a wonderfully rich soup than a stew. His version also fed 160 people, so we’ve reduced our recipe to serve a cozy 16!
New Potatoes with Goat Cheese and Tapenade
Over the years, workshop chefs have devised many memorable hors d’oeuvres with chèvre because of Cakebread’s long friendship with two wine-country goat cheese producers: Laura Chenel and Skyhill. This one-bite appetizer, featuring soft herbed goat cheese spread on a potato slice with a dollop of tapenade, comes from chef Pascal Olhats, who prepared it during the 1993 Workshop. If you have a small food processor, you can halve the tapenade recipe, as you need only a small amount for this dish. Then again, tapenade keeps well in the refrigerator, and you will be happy to have some on hand. Use it as a sandwich condiment or spread for crostini, slather it on grilled tuna, or toss it with pasta.
Salmon with Potato-Artichoke Hash
To keep the salmon pieces moist as they roast, they are gently pressed together in the pan. A rustic potato-and-artichoke hash is cooked alongside. Slice the potatoes on a mandoline or with a very sharp knife to make thin, uniform pieces.
London Broil with Potatoes and Peppers
Broiling is a great year-round method for preparing steaks, since the high heat browns the meat quickly without overcooking the interior. For a Spanish variation, substitute an equal amount of smoked paprika for the regular variety used in the spice rub.
Thyme-Roasted Chickens with Potatoes
This recipe calls for roasting two chickens in the same pan: Serve one bird and half the potatoes as a meal for four, and save the rest for the recipes on the following page. If cooking only one chicken, simply reduce the ingredients by half.
Quick Navy-Bean Stew
This flavorful potato, bean, and mushroom stew is ready in less than an hour. You can use other beans, such as black-eyed peas, in place of the navy beans; kale or Swiss chard would be nice substitutions for the spinach leaves.

THIS IS A GREEN-FREE SALAD where vegetables take center stage. The olive dressing makes this dish stand out, with fennel adding an extra crunch. Use as little or as much tuna as you wish; we prefer it as a background note.
