Black Bean Quesadillas

Roasted Squash, Red Pepper, and Jack Cheese Quesadillas

A creamy, savory-sweet purée of roasted vegetables replaces half the cheese in this colorful, vegetarian-friendly quesadilla. (Try serving the dip with raw veggies or even grilled corn.) Although dicing and then roasting the squash amps up the intensity of the roasted flavor, you can save some time by simply halving the squash before putting it into the oven and scooping out the flesh once it’s soft.

Smoked Chicken Chowder

In this comforting chowder, heavy cream, flour, and potatoes provide rich, velvety texture, while the smoky flavor of chipotle chile in adobo sauce adds heat. The recipe calls for about a pound of smoked chicken, which is available at some butcher shops and specialty food stores, but you can also use (unsmoked) chicken breasts.

Southwestern Lime Chicken with Ancho Chile Sauce

Delicata Squash Sformato

A sformato is essentially a soufflé that doesn't rise because there isn't any air or egg white whipped into it—foolproof! I serve it in place of mashed potatoes, since it has a great flavor without an excess of butter and cream. If I have people over, I'll bake it in individual gratin dishes with a few fresh thyme leaves on top for presentation's sake. Delicata squash has a flavor similar to that of butternut, but the skin is much thinner—edible, in most cases—and the squash is more delicate overall (hence the name). The flesh of a butternut or acorn squash would be a fine substitute. Cooking with squash in the fall and early winter months will yield the best results with this recipe. I find that out of season the squash become a bit waterlogged. You can do everything but bake the sformato in advance. Bring the dish to room temperature before baking.

You can reheat this ooey-gooey dip in a skillet, or keep it warm in a fondue pot.

Corn Pudding with Mushrooms and Ham

Grilled Flank Steak with Red Peppers and Fontina Cheese

Italian cuisine often features stuffed and rolled meat or fish. This recipe uses inexpensive yet flavorful flank steak. Pounded chicken or turkey breast, pork loin, or fish can be substituted. The grilled rolls are sliced into beautiful spirals and serve with gremolata reserved from the stuffing and a wonderful wood-roasted wine sauce.

Cheesy Alligator Snouts

In spite of his Irish tendencies to worry and brood, R. B. pretends to think of himself as an upbeat guy who genuinely wants to like things. Even so, he’s given up on grilled shrimp-stuffed jalapeño peppers. It’s hard to cook a raw shrimp tucked inside a pepper unless the pepper is roasted to bitter death. Cheesy alligator snouts—broiled and blistered jalapeños with melted cheese—never disappoint. Broil or toaster-oven these treats and all they need as garnish is plenty of cold beer. Serve the broiled snouts as a conversation-starting appetizer, whole and hot from the oven, or sliced and set in little tortilla scoops. Serve them as a side to a Mexican feast paired with Cheater Carne Adovada Alinstante (page 56). Jalapeños are usually tolerably hot, although it’s impossible to know until you take a bite. Satisfy all your guests with a combination of hot green jalapeños and the mild mini red and yellow sweet bell peppers.
