Muscat Grape Soup

Muscat grapes mark the beginning of spring, and they’re a prompt for me to start thinking of new menus, new ideas, and the other spring fruits to come. This soup is designed to keep the distinct musky flavor of these grapes in its purest form. “Cape” refers to the papery husk the gooseberries are wrapped in, which makes them look like tiny Chinese lanterns.

Cantaloupe, Strawberries, and Grapes with White Wine and Mint

This recipe was born out of leftovers—a half cantaloupe, a handful of strawberries, some grapes—not enough in themselves to feed a family, but combine them and you have a great dessert. Feel free to substitute with your favorite fruit or whatever you happen to have as leftovers. The sweetened wine and the fresh mint meld the fruit flavors together into a wonderfully refreshing, quick, and easy recipe. Perfect for summertime.

I love this chunky applesauce for its texture and the fact that it uses grapes as a sweetener. The key is good, flavorful apples. Take a bite out of one of the apples to determine the tartness.

Fruit Salad with Honey and Orange Blossom Water

For this delicately scented fruit salad, have a mix of fruit chosen from three or four of the following: peaches, nectarines, apricots, bananas, plums, grapes, apples, pears, strawberries, mangoes, melon, pineapple, dates, pomegranate seeds.

Fruit and Yogurt Parfaits

Making parfaits is easy, and they are such a healthful, elegant dessert or snack. Make sure to use lush, ripe fruit and a good, creamy low-fat yogurt. I prefer vanilla, but if you’d like, experiment with lemon- or orange-flavored yogurts. I also like to use two different fruits for the visual appeal, but if you’d like to stick with one, that works as well. Try your own fruit combinations in addition to the ones given here.

Just keep in mind that the cooking here is slow and gentle, not high-temperature grilling as one usually does with sausages.

The sake adds a little "je ne sais quoi" and the mint heightens the overall floral bouquet. The result is a drink that it is soooooooooo sippable that it's hard to stop. Due to popular demand, we often serve this at our Southern supper club.
