Crispy Skate with Cauliflower, Bacon, Capers, and Croutons
This lightly fried, fleshy white fish paired with crisp bacon and cauliflower is surprisingly hearty. Cream of Wheat gives the rice-flour crust an airy texture that won’t drown the fish, and the bacon drippings infuse the cauliflower with a smoky flavor. To cut the fat, drain the drippings and sauté the vegetables in olive oil instead. Dover sole is a suitable flat-fish substitute.
Gnocchi alla Romana
A departure from the more common potato gnocchi, these light, pillowy rounds feature semolina and are baked instead of boiled. Parmesan cheese and a glaze of butter make them quite rich and delicious. They go well with meat or poultry but you can also top the gnocchi with your favorite tomato sauce or pesto.
Sage and Honey Skillet Cornbread
Down-home cornbread gets a beautiful, fragrant makeover with the addition of warming honey and flowery sage. But don’t worry, it’s still the same cornbread from the block. The ingredient list is short, the prep is straightforward, and the whole dish takes so little time to prepare that you could bake it while your roasted turkey rests or chili simmers.
Thyme Focaccia and Parmesan Focaccia
This double-batch recipe for focaccia gives you the flexibility to make two different breads at once. Feel free to mix things up with other cheeses and your favorite herb and spice combinations. We love this bread as the base for sandwiches, served alongside soup or salad, or when it starts to go stale, toasted and turned into fabulous, flavor-packed croutons.
Mushroom Kasha Burgers with Chipotle Mayonnaise
This grain-based veggie burger is an excellent change from traditional bean or tofu varieties. Cooked kasha’s firmness balances the soft sautéed vegetables for a robust texture.

Epicurious member InewportTX, from Pflugerville, Texas, recommends cooking the balls in mini-muffincups, as the dough will be fairly runny. Find tapioca flour (also known as manioc starch and tapioca starch) at specialty markets like Whole Foods.
Buttermilk Biscuits with Green Onions, Black Pepper, and Sea Salt
These sweet–savory biscuits put a fresh spin on the classic buttermilk variety. Self-rising flour saves precious prep time. In fact, from start to finish, the whole recipe can be completed in about 30 minutes. To enjoy these fresh out of the oven, measure and combine the dry ingredients in advance, then bake the biscuits at the last minute.
Salted Rye Cookies
This fairly straightforward and versatile dough can be made as drop cookies instead of icebox-style sliced logs: Chill the dough, then scoop it into rounded-tablespoon-size balls, roll in the salt-sugar mixture, arrange at least 1 1/2 inches (4 cm) apart on the baking sheet, and flatten slightly. In addition, you can substitute just about any kind of flour for the rye.

Mini Cake Doughnuts
Donettes are tiny little rounds of deliciousness that really don't bear that much resemblance to bakery doughnuts but are somehow still satisfying. You can make your own in a flash with the aid of a mini doughnut pan. While it may seem strange, the addition of rye and barley flours into the batter makes for an exceptionally flavorful treat. To make Chocolate Mini Cake Doughnuts, simply add two tablespoons of cocoa powder to the flour mixture.

Buckwheat Harvest Tart
After Hugh and I got married, just before I started writing this book, I started experimenting with vegetable dishes that could qualify as "man food." I came up with this dish featuring the fabulous combination of barely sweet squash and savory onions. At this point I count on one hand how many times I had made a tart, so I was pleasantly surprised when this went over as well as it did.
I will not lie; this tart has a fair number of steps and will leave you with a sink full of dishes, but it's well worth it. If you like, you can make the tart shell, roast the squash, and sauté the chard a day in advance, then bring everything to room temperature before assembling it. Make sure that there are no holes in the tart crust and that it is completely cooked before adding the filling. I've had the egg mixture leak through the crust before, so hopefully I'm sparing you the same frustration.

Plum and Polenta Cake
This is a family favorite, created by Gianni's aunt Angela. It's a great cake to make when summer fruit is abundant. It is delicious when made with the plums called for in this recipe, but you may also want to consider using figsone of my favorite fruitsor pitted sweet cherries. You can substitute about 6 quartered figs or 1/2 cup of cherries in place of the plums.

Rice Noodles
Dried rice noodles are readily available, but homemade fresh noodles are a fun project. If you've ever made the light pastry dough known as pâte à choux (the base for gougères and profiteroles), the first step to making the noodle dough will be familiar. The flour and water are mixed together, then cooked on the stove top until thick (this step also cooks out the raw-flour taste).
This is a two-person operation: once the paste thickens, one person will need to hold the pot down while the other stirs continuously. You will need a potato ricer for extruding the spaghetti-like noodles. The flavor of these noodles improves if you let the initial rice flour-water mixture ferment at room temperature for four days. While not essential to the success of the recipes, it does lend a nice tanginess to the finished noodles. However, if you are in a rush, you can let it soak overnight. The noodles can be used in Bún Bò Hue or as the base for noodle bowls.

As an example, here is my adaptation of the recipe for cornbread Schlesinger served in his East Coast Grill from the time he opened the place in Cambridge, Massachusetts, in 1985. The adaptation? I have added a few cups of frozen organic corn for texture. Those who wish to go further might add a fine dice of fiery chipotle peppers in sauce, or cook a few slices of bacon in the skillet before cooking the dish, and add the crumbled result to the batter. The fat left over in the pan would allow you to reduce the amount of butter you use by about 2 tablespoons.
