This recipe can be prepared in 45 minutes or less.

Kansas City Steak Sauce

An easy homemade barbecue sauce makes anything you grill taste even better! Makes lots since it keeps for weeks in the refrigerator.

Brisket with Herbed Spinach Stuffing

A vegetable and herb filling adds another element to an unusual and impressive version of a classic Passover main course.

Roast Turkey with Maple Herb Butter and Gravy

Maple syrup and apple brandy lend a delicate flavor to the turkey and gravy. The New England Sausage, Apple and Dried Cranberry Stuffing is an especially nice accompaniment. Watch how to prepare and carve your bird with our streaming video demonstration.

Chicken Rice Soup

This is probably the simplest soup ever made from scratch: you just throw everything into the pot at once and walk away. The rice cooks in the pot along with the chicken long enough to give its starches over for extra body. Everything you dislike about brown rice — its starchiness and heaviness — works to advantage here. It turns soft and almost falls apart but still has texture. Don't substitute white rice, because it would get mushy. This soup may not be beautiful, but it sure is good.

Mark Siegel's Whitefish Salad

I particularly like this version of whitefish salad, because there is no filler in it. Mark, a political consultant who served in the Carter White House, makes it for break-the-fast as well as during the year brunches.

Tomatillo Celery Salsa

This recipe can be prepared in 45 minutes or less. We loved this refreshing condiment teamed with lean beef and with grilled shrimp.

Mixed Vegetable Gratin

New England Sausage Stuffing with Maple Corn Bread

Maple syrup in the corn bread adds a touch of New England to this traditional stuffing. The leftover bread is also nice with scrambled eggs or omelets.

Molasses-Brined Turkey with Gingersnap Gravy

Brining ensures moist, succulent meat, and this recipe from Bruce Aidells, chef and founder of Aidells Sausage Company, could not be easier or more low-tech. The special equipment required? Two 30-gallon plastic bags and one very large (16-quart) bowl that will fit in the fridge. You'll want to get started a day ahead, because the turkey is brined for 18 to 20 hours. Stuffing this turkey is not recommended; the brine remaining in the meat may soak into the stuffing during roasting.

Traditional Fish Stock

This stock is even easier to put together than <epi:recipelink id="105266">Strong Fish Stockepi:recipelink. It does not require fish heads, only the bones of flat fish — sole, founder, halibut, or turbot — and it doesn’t call for the extra step of sweating the bones. It has a more delicate seafood flavor, and it is not as gelatinous as the Strong Fish Stock, making it very versatile. In addition to chowder and seafood stews like bouillabaisse, you can use this to make fish velouté and delicate French sauces such as Bercy (based on velouté and shallots) or bonnefemme.</epi:recipelink></epi:recipelink>
