Buckwheat Crepes with Honeyed Ricotta and Sautéed Plums
My friend Keena lives less than a mile away and has a plum tree she can't keep up with. In early fall, she makes jam with as many plums as she can and sends me home with a big grocery bag full of them every time I see her. I'm not much of a canner, so I began sautéing them and using them as a topping for yogurt and porridge, and as a filling for these simple buckwheat crepes. While buckwheat groats have a pretty distinct flavor and can be a hard sell for many folks, buckwheat flour is commonly used and adored in both sweet and savory crepes. For this recipe, use oval-shaped Italian plums (or prune plums) if you can; they're nice and firm and lend themselves well to sautéing—or just plain snacking.
Morning Notes: The crepe batter needs to rest for at least an hour, so plan accordingly or make the batter and refrigerate it overnight. If you go that route, the crepes cook best when the batter is at room temperature, so let it sit out for at least 30 minutes before cooking them.

Buckwheat Harvest Tart
After Hugh and I got married, just before I started writing this book, I started experimenting with vegetable dishes that could qualify as "man food." I came up with this dish featuring the fabulous combination of barely sweet squash and savory onions. At this point I count on one hand how many times I had made a tart, so I was pleasantly surprised when this went over as well as it did.
I will not lie; this tart has a fair number of steps and will leave you with a sink full of dishes, but it's well worth it. If you like, you can make the tart shell, roast the squash, and sauté the chard a day in advance, then bring everything to room temperature before assembling it. Make sure that there are no holes in the tart crust and that it is completely cooked before adding the filling. I've had the egg mixture leak through the crust before, so hopefully I'm sparing you the same frustration.

Buckwheat Pretzels
Pretzels are probably the best snack to enjoy with beer, and if you’re a fan of stout, these pretzels are an especially winning partner. The Pennsylvania Dutch brought their love of pretzels to Penn Yan, where Birkett Mills still turns out the dark, gritty buckwheat flour that gives handrolled pretzels a distinctive, nutty flavor. Since these pretzels don’t require yeast or rising time they can be made very quickly, so start this recipe when hunger strikes. Caution: Baskets of these pretzels served with a peppy horseradish mustard will make you drink more than you may have bargained for.
Lemon Blinis with Caviar and Scallion Crème Fraîche
Nothing says CELEBRATION like blinis and caviar. These quick, buckwheat pancakes, made with baking powder (unlike the traditional yeast-based ones) are brightened with the addition of lemon zest. Use whatever caviar you prefer and your budget will allow. We are quite enamored of the trout caviar made in North Carolina (see Cooks' Notes). The roe is a beautiful pale orange with a delightfully firm texture that pops in your mouth. Better yet, it's much more affordable than imported or domestic sturgeon caviars (see Cooks' Notes).

Buckwheat Crêpes
At one time, my fondness for crêpes almost led me to open a crêperie. Friends prevailed and I opened a restaurant instead, but crêpes are still one of my favorite desserts—especially made with buckwheat flour. The batter is best made a day in advance.
Buttermilk Pancakes
For different flavors, use different flours; they can be mixed and matched at will, as long as half of the flour is whole-wheat pastry flour, to keep them light.

The batter is made in two stages. First a sponge is made (a mixture of milk, flour, egg yolks, and sugar that starts the yeast going and develops extra flavor) and then more milk and flour are added after the first rise.

A somewhat more elaborate procedure than the preceding recipe, to be sure, but super in flavor. See the excellent variation as well. This is practically a main course, good with a vegetable dish and a salad.

This can work as a main course, though it is better, perhaps, as a side dish with poultry or as a filling for Pierogi (page 59). Given real-world options, fresh ricotta might be your best bet for cheese. If all you can find are packaged cheeses, small curd, full-fat cottage cheese is probably the best choice.

Here is kasha, simply prepared with butter. It’s good with olive oil, too, but best with rendered chicken fat.
Buckwheat Crêpes
Everyone knows about sweet crêpes (page 645), but visitors to France quickly become addicted to these—the classic snack food of Brittany—especially the ham-and-cheese variation. Traditionally, the batter sits for an hour before starting to cook. As long as you plan ahead a bit, that shouldn’t be a problem. But in a pinch you can skip the resting period—it doesn’t make too much difference—and overall these are easy to make and great as savory starters or a light lunch or supper.
Buckwheat Pasta
I love buckwheat for the earthy, gritty character it brings to many dishes. Flour made from the buckwheat seed (it’s not a relative of wheat) is used in Japanese soba noodles and is traditional in Italian pasta too. In the Valtellina they make a dish called pizzoccheri, buckwheat pappardelle dressed with cabbage and bacon and Fontina.
Yeasted Buckwheat Waffles
The yeast, in addition to letting the batter sit for at least six hours, gives these waffles a chewy consistency and a slightly pungent flavor. One note on preparation: Since this batter needs to stand overnight, be sure to prepare it a day in advance. You can freeze these waffles, well wrapped, for up to a month. Simply heat them until nice and crispy in a preheated 350°F oven for 5 to 10 minutes.
