Grits with Jack Cheese, Chiles, and Greens
Spring greens are an excellent source of vitamins A and C, which makes them all the better to eat after a long winter. Tender arugula or baby spinach enrich the corn, making a perfect accompaniment to chili, grilled steak, or a vegetarian main dish.
Green Posole
Posole is both an ingredient and a dish. The ingredient is dried field corn soaked in lye or wood ashes in order to loosen the thick skin and make it easier to remove the kernel. It is the primary ingredient in the dish posole, which is a Mexican and southwestern favorite for Christmas Eve and New Year’s Day. Posole can be made with either red or green chiles. Canned kernels, known as hominy, can be used, but dried posole stands up the best in the slow cooker. Serve with warm, fresh corn tortillas.
Stuffed Peppers Florina
Florina peppers are named for a city in western Macedonia (Greece), a part of the Greek countryside in which peppers are an all-important agricultural crop. They have a thick, red, sweet, firm flesh and are perfect for stuffing. I was first served them at the table of Mrs. Fany Boutari, the gracious matriarch of Greece’s premier winemaking family. While Florina peppers are not easily found in the United States, you can buy them roasted and bottled, or you may be lucky enough to find some red Anaheim chiles that will work. In a pinch, you can use good old green Anaheims or the bigger poblanos, as I do. They won’t be quite as sweet, but they will be good.
Zucchini Relleno
Modeled after the traditional cheese- stuffed, deep- fried green chiles that I adore so much at Mexican restaurants, this lighter, healthier version is almost as much fun to eat. I like to use a mixture of mozzarella and Spanish Manchego cheeses, but you should use what you like. Often, I’ll use soy cheese substitutes instead of real cheeses to make this a nondairy dinner that’s lower in saturated fats and easier to digest.
Indian Tofu
You can control the amount of heat in this meal with the types and amounts of chile peppers. I like the spectrum of flavors that results from mixing roasted with fresh chiles. To roast a chile pepper, you can treat it as you would a marshmallow when camping, using tongs or a long fork to rotate it over a low flame on a gas burner. However, a safer chile-roasting method is to place the chile on a baking sheet and slide it under the broiler for just a few minutes. When charred on all sides, place the chile in a bowl and cover with plastic wrap. The steaming will loosen the skin, making it easy to remove. Peel, stem, and seed roasted peppers before using. See page 168 for a discussion on preparing tofu.
Green Chile, Black Bean, and Corn Stew
If you want to, you can stretch this hearty southwestern stew by serving it over brown rice. Put about a half-cup of cooked rice in each bowl, then top with the stew.
Huevos Rancheros Casserole
Capture the traditional flavors of huevos rancheros with this any-time-of-day casserole. You can make it and bake it right away or prepare it ahead of time and bake it the next day.

Use leftover turkey from the holidays for this festive soup, or for a grilled turkey version, use leftover turkey from the Grilled Turkey Cutlets with Pineapple—without the pineapple (page 162).
Belleville Market’s Mechouia
Little Tunis and the multicultural and bustling Belleville market in Paris are populated with French farmers and merchants from North Africa. In the restaurants and stores bordering the market, you feel as if you are in North Africa, as Tunisians and others congregate at kosher and halal restaurants, bars, and bakeries. You also feel the influence of the Italian tenure in Tunisia: Italian bread, beignets shaped like the Italian manicotti, and canned tuna in olive oil. An everyday snack that Jews and Muslims make from the ingredients found in this market is a large brik filled with parsley, tuna, and a raw egg, then quickly deep-fried and served with a salad called mechouia. The word mechouia, which means “grilled” in Arabic, can be applied to grilling an entire lamb or just the vegetables that go with it. Some sprinkle salt on the grill to keep away the evil eye. The trick to making a good mechouia is grilling more tomatoes than peppers. To retain the flavor of both vegetables, sprinkle them with salt after they are grilled and peeled, and let them drain overnight, to help the water seep out. In the market, Tunisians use corne-de-boeuf peppers, the ones they grew up with in Tunisia, but you can substitute Anaheim peppers, which are very similar, or others.
Southwest Panzanella
This variation on the "little swamp" theme features sourdough bread and those ever-appealing Southwest seasonings: fresh chilies, cilantro, cumin, and corn.

Roasted Mixed Peppers with Capers and Marjoram
Charring the peppers adds a smoky flavor and brings out their sweetness. Steaming the charred peppers before peeling them allows the skin to separate easily from the flesh. Be sure not to rinse the peppers as you're peeling them—you'll wash away flavorful oils and sweet juices.

Mushroom, Rajas, and Corn Taco with Queso Fresco
The earliest Mexican cuisine was vegetable-based, so in times past, before Spanish beef, chicken, and pork worked their way into every taco, there were no doubt plenty of satisfying vegetable taco recipes. Today most vegetables are consumed as salsas, in soups, or stuffed into quesadillas and empanadas, but there's no reason why a vegetable taco shouldn't be every bit as tasty and unusual as any other. This sumptuous vegetarian feast is based on the classic combination of roasted poblano chiles and mushrooms, with the addition of corn and mild-flavored, soft queso fresco. This taco is often favored by even the most committed carnivores. In other seasons, bits of diced cooked sweet potato, zucchini, chayote, squash blossoms, or golden winter squash would be welcome additions.
Fresh epazote, used as a flavoring in this taco, has a minty-oregano taste and is often available at Mexican markets. (It is also hardy and easy to grow.) Fresh or dried mint or Mexican oregano may be substituted, but do not substitute dried epazote.

Rib-Eye Fajitas on the Grill
My idea of party perfection is a backyard fajita fest. I have the guys roast the peppers until blistery and browned, then I send them into the kitchen to seed and slice them. Next they grill up the steaks and cut them into nice, thin strips. Meanwhile I've already set out bowls of guacamole, sour cream, salsa, and chips. We all gather around my outdoor table, each of us making our dream fajita with just the right balance of steak and peppers, sour cream and guacamole.
